    I already feel better after only 2 doses of prednisone and that inhaler...hopefully, will be able to get some good exercise this week.

    Well, I got the morning off and am already making a slew of dishes:

    1) broccoli soup (tastes just like panera with 1/3 of the fat)
    2) pico de gallo
    3) garlic-rosemary lamb pita (which had fabulous reviews and look mouth-watering)
    4) seared scallops with fresh linguine and romano cheese (I'll just buy the ingrediants today and cook tomorrow)

    If any one is interested...I can send recipes

    Lastly, got on the scale this morning and up (+0.6 lbs)...I think I will re-weigh again tomorrow or Thursday as I believe that was the last time I changed the ticker...Pretty happy with that for feeling like crud and 2 drinking days

    I had a pt fall on the unit that was assigned to me and broke her humerus and had a huge laceration on her skull...you can't even imagine the liability associated....yep, tried the skinny margaritas on Thursday...the whole bottle:drinker:

    Sam Adams at the casino...it was a better value than throwing money into the machines:bigsmile:

    Thanks Kim.. it looks YUMMY! :flowerforyou: Never heard of applewood-smoked bacon? Probably skip it anyways, how can you ONLY cook 2 slices, w/o cooking the whole lb... not in my house. :noway:

    Applewood bacon is soooo good...I buy Neuske's when it's on sale 'cause it's expensive and totally worth it...last time it was on sale I bought 6 packages...yes, I cook the whole thing and throw on baked potatoes, Sunday breakfast, salads...it does not go to waste...the last time I bought regualr bacon, it was like eating cardboard

    I think that cooking light tries to limit fat and really boost flavors which is the case in this recipe when using the bacon.

    Let me know how it turns out as I haven't tried it

    Th only time I buy bacon it to make Hot German Potato salad. I will do that!! Might be a bit.

    Super dinner tonight....the pasta is so good with a bit of olive oil, fresh basil, pepper and romano cheese...literally cooks in 15 minutes or less

    The key to obtaining the perfect sear on the scallops is to cook them in a very hot pan. Fresh linguine has a silky texture that provides a nice contrast to the browned crust on the scallops. Add mixed greens tossed with a balsamic vinaigrette.

    Yield: 4 servings


    Ingredients
    1 (9-ounce) package refrigerated linguine
    1/4 cup plus 2 tablespoons (about 1 1/2 ounces) finely grated fresh Romano cheese, divided
    2 tablespoons olive oil, divided
    2 tablespoons chopped fresh basil
    1/2 teaspoon black pepper
    1/8 teaspoon salt
    1 1/2 pounds sea scallops
    4 lemon wedges
    Preparation
    1. Cook pasta according to package directions, omitting salt and fat. Drain pasta in a colander over a bowl, reserving 2 tablespoons pasta water. Combine pasta, reserved 2 tablespoons pasta water, 1/4 cup cheese, 1 tablespoon oil, chopped basil, and pepper in a large bowl; toss well.

    2. Heat remaining 1 tablespoon oil in a large cast-iron skillet over high heat. Sprinkle salt evenly over scallops; add scallops to pan. Cook 1 minute on each side or until golden.

    3. Place 1 cup pasta mixture on each of 4 plates; top each serving with about 3 scallops and 1 1/2 teaspoons remaining cheese. Serve with lemon wedges.

    I didn't even count wine as a fruit...but, I had lots of it....:devil:

    Dinner out was awesome....panzerella salad, potato puree with turnips and tenderloin with mushrooms...super yummy

    Keep up the good work girls...we are 2/3rds done with the month

    the 18th and 20th were more like 4.
    I could cheat and count raspberry preserves and strawberry yogurt but I won't!:laugh:

    I need to go grocery shopping. Hard to eat it if it's not in the house!

    This challenge is keeping me more accountable, eating less carbs and my body is feeling better by eating the "cleaner foods". Cant say I like the F & V more... some times though :tongue: Thanks girls :flowerforyou:

    I don't think I hit the mark yesterday at all...lime juice in martinis probably doesn't count...:frown: potato skins, I'm guessing, aren't a part of this either.
