Potassium, Vitamin C, Fiber...what's not to love? I eat potatoes all the time and I'm pretty healthy.
I read somewhere that when cooked and then chilled, the structure of the starches changes so that they are more slowly absorbed (lower glycemic index), thus causing less of a spike in your blood sugar. That's not really that big of a deal to me, since I have great blood sugar levels every time I'm tested, but it might matter more to me if I was insulin resistant.0
