6 Armenian cucumber slices, each topped with a little coleslaw, cheddar cheese, roasted chicken, and 1/2 a cherry tomato. Cantaloupe for dessert. My friend at work brought me this huge 2 foot long cucumber today. Her friend grows them, and gives them to us throughout the summer. This was the first one this season.0

that sounds AWESOME! how many cals? the bean dip maxed you out right?0 -
that's almost a standard dinner for me. i don't have a camera but it looks a lot like that, except the beef and veggies portion not so large.0 -
sometimes i eat the trip tip with tomatoes instead of the peppers and onions.
and i'll usually add a baked potato to that with seasoning. usually when we cook the idaho potatoes for an hour they are moist enough inside not to require butter, unless my macro's demand the fat.

Looking at your diary, it seems the only foods you eat are Pringles, bean dip, and diet coke… Just curious as to why you only eat 600-800 calories a day.0 -
Work dinner: fennel dusted sea scallops with saffron risotto and asparagus, 2 glasses pinot grigio. Didn't take pictures but wish I had, it was beautiful!0

I didn't have supper last night.0

Sausage/corned beef sandwich with onion, tomato, lettuce and Swiss. Also had mixed veggies, stir-fry and a couple of cucumbers. Then after supper went over to my sister's place and picked blueberries. I ate the ones that wouldn't fit in an empty yogurt container. 3/4 cup blueberries, 44 gr Blue Bell Ice cream, 50 gr Greek yogurt. Very good.

Someone was asking about homemade salsa recipes earlier today. I just found my wife's Pico de Gallo recipe. Here it is:
3 large diced tomatoes
1 diced onion
1/4 bunch cilantro
juice of half lime {or just lime or lemon juice}
2/3 Tbs minced garlic
2 or 3 Jalapeno, or the pepper of your choice
Wash tomatoes and cilantro
Dice tomatoes, onions, chop cilantro and peppers
Combine in a bowl, add salt, garlic lime juice
Mix and serve.
For smoother salsa you can use a blender.
Enjoy,
