    A ham, turkey, chicken breast and pork loin sandwich with pepper jack cheese and tomato slices, corn, corn salad, green beans, stir-fry veggies and boneless Buffalo wings with honey mustard dipping sauce. All pretty good.

    I just had the exact same thing I had last night. Lentils reheated with turkey, veggies, pepita seeds, raisins and cheese.

    I don't have a picture yet, but I bought some turkey sauté yesterday (just turkey breast cut into chunks, I guess) and plan to have a low-carb dinner of that and some veggies. I'll post a pic tonight!

    Dinner was a quick toss of spaghetti pasta in my reserved shrimp scampi garlic butter sauce [from dinner last week]. Served it with breaded oven baked shrimps and Cucumber salad .

    We went out for Italian tonight. I had spaghetti aioli (spaghetti tossed with olive oil and LOTS of garlic & I added parm cheese and red pepper flakes). So good. Lots leftover.

    Same supper as last night, just new bread and mixed veggies in the place of corn. The sandwich held together through the first bite.

    Last night's supper was at my mom's house. She made:

    Meatloaf(my grandma's recipe), mashed taters and gravy, carrots, green beans and then she also made apple pie, which I had a slice with a scoop of ice cream served hot. Yummy. Also had water to drink.

    Man, I love cooking but I never remember to take photos because I don't have an easy way to upload them.

    Tonight was open faced tuna melts with caramelized onion and fig. Dessert was pumpkin pie baked in the pumpkin! It accidentally turned into a souffle in the oven though.

    Pork Tenderloin in the Crock Pot (not my preferred way of cooking but we are in between bbq grills now and I had one that needed to be cooked). Mashed Potatoes and Lemon Garlic Green Beans.

    Dinner consisted of Spicy chicken wrapped asparagus in lemon dijon sauce, served with oven baked potato wedges and a raw asparagus edamame salad with lemon vinaigrette. Thunder storm freak showers curtailed our plans to swim laps@around 3 to 4PMish, so my sister whipped up some chocolate banana bread muffins, which I ate for dessert with espresso.

    Thai Chicken and Vegetable Soup

    1 tablespoon vegetable oil
    1 medium carrot, peeled and cut into 2-inch matchstick-thin strips (about 1/2 cup)
    1 medium red bell pepper, cut into 2-inch matchstick-thin strips (about 1 1/2 cups)
    1 cup sliced mushroom (shiitake, oyster, cremini)
    32 ounces (1 carton) Swanson® Thai Ginger Flavor Infused Broth
    2 cups shredded cooked chicken
    14 ounces (1 can) unsweetened coconut milk
    2 tablespoons lime juice
    2 tablespoons chopped fresh cilantro leaves

    2 cheese enchilada, 2 chicken enchilada, rice, beans, and red sauce telly supper. Can't get any better than that. Also having a glass of Viva Fat Free Skim Milk to go with it.

    We went out.

    so, hubs and I shared a whole wheat pizza and a salad. I had 2 slices of pizza and about 1/3 of the salad. And 2 glasses of chardonnay. cheers!

    Usually go grocery shopping today, so I'd thought to empty out the fridge last night. Threw together stir fried rice, corn, snap peas, chicken and eggs a la Chinese fried rice.

    We went to the all you can eat Chinese place to celebrate my Sister's birthday. When we got home I found out that the lightning had knocked out my modem, so I couldn't post until I got to work. But on the bright side, it kept me from having to try to log everything I ate. I was dreading that chore.

    Chinese greens, cabbage, frog leg, fried sweet potato, cho cho chicken, spicy squid shrimp, black pepper pork {you have to look close to see it} and crab meat wrapped in bacon.
