Wow, amazing lunch inspired by the Mongolian Grill trip last week. Cooked Ramen Noodles (just the noodles, not the nasty seasoning pack), zucchini, carrot, garlic, onion, pepper, water chestnuts, mushrooms, red pepper flakes, a drizzle of soy sauce, and a dash of sesame oil. I sprinkled a little chow mein noodle on top for some CRUNCH!

Have to stick with soft foods for awhile (annoying dental issues). Egg sandwich on potato bread with cheddar and mustard. Sides of macaroni salad, cherry tomatoes and raspberries.

Too much going on at work for me to do any cooking. Ham and Colby Jack sandwich, carrot, popcorn and apple. Rinse and repeat. But Margie says she has leftovers at home. I'll nibble on them when I get there.

Chicken salad sandwich on sourdough with added spinach, onion, tomato and mini portobello mushroom. Sides of red bell pepper and cucumber.

Made bruschetta chicken with cherry tomatoes for dinner ... We'd tossed some mini mozzarella balls and basil in after serving with balsamic vinegar. [Addicted to BV]

Margie cooked Chicken Enchilada Soup tonight. I had a little shredded cheese on mine, with toasted baguette slices.
Had some more of the Yellow meat melon.

Oh my god. I just have to say, I saved the egg roll that came with my sesame chicken for later. I just ate it and there's an orgasm in my mouth. I have not tasted something like that in months.0

Made some turkey vegetable meatloaf (with whiskey steak sauce and sriracha), sauteed rosemary mushrooms, and butternut risotto with parmesan. First time making risotto - I used long grain rice and turkey stock I had frozen from last year because that's what I had, and it came out phenomenal. So creamy and delicious. Not a very pretty dinner (needed some parsley green), but super satisfying.

Friday night went out for pizza and wings at a local wood fired pizza place. Kids were out of control so I forgot to take pics.
Saturday I was cooking some meals for friends going through some things (surgery, babies, etc) and I decided to make a recipe I had seen on Pinterest a while back but was never that eager to try. Oh my, it was so good, and so easy. In one 9x13 dish arrange: a bunch of cut up new potatoes, 3-4 chicken breasts, and whatever green veggie you prefer (I used green beans). Sprinkle a packet of Good Seasons Italian Dressing (dry) over the top and melt a stick of butter and pour that over the whole thing. Bake for 1 hour. It was so good, will definitely be in the regular rotation.

Sunday: my son's birthday party at our house. So much food... Grilled Chicken Legs, Brats, Mac n Cheese, Proscuitto Wrapped Asparagus, Fruit, Ice Cream Cake, Beer, Wine... forgot to take pictures!0 -

Betty's Mini Asian Porker Cabbage Wraps
5.9oz ground pork, raw 3 green cabbage leaves 1/4 cup chopped fresh cabbage 1 tbsp chopped onion 1/4 tsp ground ginger 1 tbsp Kikkoman low sodium soy sauce 1/4 tsp plain sesame seeds 1 tsp vegetable oil
1. mix ground pork, chopped cabbage, chopped onions, ground ginger, and soy sauce together by hand. Form 15 thin finger shapes and set aside.
2. bring pot of water to boil. After cutting down each cabbage leaf into 5 pieces ending in a total of 15 cabbage wraps, place these into the boiling water and let parboil for just a few minutes before taking out to drain.
3. heat 1 tsp vegetable oil on med heat. add the 1/4 tsp sesame seeds to the hot oil and stir continuously until light golden brown. 4. spread the oil and sesame seeds out within the pan and begin to add the mini asian pork fingers. turn over frequently and be very careful not to burn. remove from pan as soon as pork is done so as not to overcook.
5. place cabbage wrap on plate and add a pork finger, then roll up and ENJOY!! If you have enough calories and carbs to spare, feel free to spritz with more soy sauce on the outside.
Makes 15 wraps servings. Each serving has 36 CALORIES, 1g CARBS, 2g PROTEIN, 3g FAT, 46g SODIUM, 53g POTASSIUM, and 8mg CHOLESTEROL0 -

Also had a Pulled pork sandwich, green beans, mixed veggies, stir-fry veggies and baked beans.

No picture but I made boxed red beans and rice with zucchini, peppers, and sausage mixed in with a large salad on the side. Over 700cals but my other meals were lower and I still am under goal. Whoo yay lazy cooking!0

No pic again(my phone died). I had my mom's bisketti. So good. It was something she had leftover, so it worked out great.0

I really like love the new forums. Glad MFP is catching up with all the other forums out there.
The chicken enchilada soup was mostly gone, so I mixed what was left with green beans, mixed veggies and stir-fry veggies. Also had a couple of little ham sandwiches and a few grapes.

I was a lazy man tonight and didn't cook any veggies. But I did have a turkey burger, ham, Colby Jack, Pepper Jack sandwich with pickles, onion and tomato. Also had popcorn, carrot and grapes. Not too bad.
