Dinner tonight is a salad of fresh corn, cucumber, green onion, red bell pepper, turkey, mozzarella, 2 tbs macaroni salad and black pepper.

I had a big banquet at work tonight. They had green beans, corn casserole, a roll and pork loin. The corn casserole was better than it looks. They gave me about a gallon of it when it was over. I'l freeze some of it and spread the rest around the neighborhood.



And assorted desserts.

This. Except spinach ravioli instead of penne. And my "crushed tomatos" was actually my homemade tomato sauce with eggplant, zucchini, and red peppers.

The green beans were out of the big gallon cans, although they were seasoned with some of the pork loin. I was watching the cook {who is also my insurance agent} mix up the corn casserole. Not sure of the proportions though, he was cooking for 225 folks. Only about 150 turned out, so they had lots of leftovers. Like I said, I got a gallon of the corn casserole and half a coconut cake. They often send me home with some pork loin, but this time they didn't offer any.

Yesterday's supper first course. Cheese Ravioli. Never really thought much to putting pics up! Now I know!



Second course, a Spanish rice dish my mom made and sent home with me a few days ago.

Last night's dinner was Mediterranean skillet pizza topping in a whole wheat pita pocket. Soo good. Am going to eat some for lunch today or a late PM snack, so I'll try to take a pic then.

Practicing my Thanksgiving baking. Made some cream cheese filled pumpkin streusel muffins. My new favourite. Ate some for dessert and then one for breakfast. Was psyched to NOT like it ~ usually do not@streusal crumbly topping.

It's tacos and a movie night tonight. So, my sister and I are already starting on the tortillas before our swim. We like our tortillas big. We might decide to fry some up, if we're feeling up to it. :glasses: :drinker: Enjoy your Friday evening everyone!:drinker: :glasses:

I was a lazy man tonight. Leftover bacon, baked beans and Mexican chicken with a ham, turkey and Colby Jack sandwich. After I log my food and exercise I will see about any possible dessert.

I was going to make eggplant pizzas tonight, but then... I didn't.

Shredded beef (left over from some French dip sandwiches; yum!), steamed broccoli, and pesto-filled tortellini. A bit of a weird combination, but tasted decent and was fairly filling.

Ball game went into overtime, so I'm late posting tonight. Supper was baked beans, green beans, mixed veggies, corn casserole and un-stuffed pepper trio {bell, Jalapeno and chili}. Pretty good.
