Cucumbers and carrots dipped in roasted garlic hummus. Simple and wonderful... I can't seem to get enough.0

Roast pear and pancetta salad with honey vinaigrette (recipe courtesy of Yolanda Torrisi)
10 slices of pancetta (Italian style bacon)
2 small firm pears, halved
a bag (appr. 8 oz) of arugula salad
half a pound of parmesan cheese, shaved
thyme, pepper
Preheat the oven to 350 degrees. Place the pears on a baking sheet with the cut side up. Sprinkle with thyme and pepper, and bake until soft, appr. 20 minutes. In the meantime, fry the pancetta until crisp and make the honey vinaigrette using:
½ cup honey, ½ cup extra virgin olive oil, 1 tbsp of wholegrain mustard, and ½ cup of red wine vinegar.
Put the arugula salad on a plate, top with the crisp pancetta, half a pear and some parmesan shavings. Drizzle the vinaigrette over it.0 -

My regular food obsession at this time of year - it's local asparagus season - for a month it seems we eat no other veggie but asparagus, I buy 10 lbs at a time and don't freeze any of it, bwahahahaha!
Soon to be followed by the unfortunately shorter fiddlehead season...0 -
Chickpeas and quinoa sauteed with some diced tomatoes, spinach, onion and corn mixed with a tbsp or 2 of tomato based sauce... Yum!!0

They're all vegetarian friendly and their calories range between 82-169 per cup!
Sometimes I dip some light Salada crackers or a wrap with light philadelphia depending on what I'm planning on eating in the night0 -
Brussel Sprouts. Roasted or stir fried. Yum. Also enjoy spaghetti squash. Who knew vegetables could be so good?0

• Natural Peanut Butter, by the TB into mouth from jar. Lol
• All yogurt, especially Greek
• Quest bars, I second - so pricey though for poor old me
• Apples and carrots. ( not in that order or together)

Avocado. I've been on an avocado kick trying to learn new ways to incorporate avocado into my diet. The one I like best right now is grilled cheese sandwich grilled in a pan with butter or olive oilwith avocado, maybe spinach, maybe tomato, maybe turkey bacon, maybe chicken...the possibilities are endless! That's why I like!0
