I was experimenting with a lower calorie option for late day when I'm low on calories. ...broiled eggplant slices topped with a cauliflower, roasted garlic, goat cheese brie "cheese" sauce blended smooth - it turned out yummy and consistency of ricotta, and tomato sauce flavored with a couple anchovie filets melted in with Italian seasoning. It was quite good. I'll probably try it as a lasagna option.0

I made a homemade pizza with a pilsbury pizza crust, spaghetti sauce, and mozzarella cheese on Monday. I usually eat half the pizza and leave the other half for my fiance. He only ate half of his half, so there was a quarter left. He told me yesterday that he probably wasn't ever going to eat the leftover quarter that's been in the fridge. I decided to eat it for breakfast. It was only 325 calories, so it worked.0
