    Macaroni and Cheese--Laughing Cow Light

    This is the healthiest I could get this--good fiber from the WW elbows though. There is no macaroni and Cheese in France, so this is what I make when I have a taste for it.


    Minutes to Prepare: 5 -Minutes to Cook: 12 -Number of Servings: 2

    Ingredients

    4 oz uncooked whole wheat elbow macaroni
    4 wedges Laughing Cow Light cheese (myfavortie is the swiss or the jalapeno, sometimes i do half and half)

    1-2 TBLSP milk

    Save Now

    salt, pepper to taste

    Halve a banana lengthwise then smear with Smooth Sensations Cream Cheese Spread Strawberry Cream 1/3 Less Fat. Next, top the banana halves with fresh strawberries. It’s like dessert for breakfast! Note: scoring the banana with a fork will help with the spreading.
    1 cup strawberries(halved lengthwise) 49 calories, 12 carbs, 1 protein, 0 fat
    1 medium banana 105 calories, 27 carbs, 1 protein, 0 fat
    Laughing cow strawberries and cream smooth sensations cream cheese spread 45 calories per serving, 2 carbs, 2 protein, 4 fat
    I use 2 wedges of the laughing cow strawberries and cream cheese spread.

    I've never heard of Cinnamon LC... sounds yummy though!

    Stuffed portabello for 1

    Ingredients
    portabello mushroom (big! snap off the stem if it has one, dice up the stem and toss it in with the other diced stuff)
    butternut squash (about 1/3 - 1/2 cup, diced small)
    onion (less than a 1/4 cup diced small)
    sweet pepper (less than a 1/4 cup, diced small)
    1-2 wedges laughing cow cheese (lite!)
    1/2 tsp of oil

    Mix together the squash, onion, pepper and mushroom stem and fry in a pan with the oil until you get bored or the onions seem softish.

    Mix that stuff with the cheese in a bowl.

    Put the pepper inside-facing-up in a dish, pack that sucker full of the cheese-y veg mixture, (if there's extra you can eat it or bake it in a small dish alongside).

    Bake at some degree or other (350-400 is fine) for some amount of time (20-30 mins? keep an eye on it!) until everything is soft. Eat.

    I just made a "quesadilla" with some Flat out flat breads, mushrooms, onions, spinach, and the cheese..It was HUGE and delicious and under 300 cals :)

    I have not had a chance to read thru this whole topic..... so someone may have already shared mine:

    I make chicken salad using Laughing Cow instead of mayo.... One 6oz can of 98% fat free chicken, two wedges(any flavor), and one hard boiled egg is 230 calories, 28 g of protein, and 10 fat . :smile:
    Sometimes I put it in a wrap, or just put it on bread or a round sandwich thin.

    Stuffed Jalapeno

    Jalapenos Cut in half length wise ( 12 )
    any savory flavor LCC ( 6-8 wedges )
    Turkey sausage ( 1/4 cup cooked )
    Parm Cheese (1/3 cup )

    Seed and cut your Jalapenos, crumble and cook your sausage,
    while the sausage is still hot add to the LCC and the parm cheese
    mix well, put on the peppers and bake @ 350 for about 20 minutes
    this is awsome !

    You get 6 half jalapenos for 118 calories

    I think you might be my hero!!!

    What I made this afternoon with Laughing Cow:

    I only had French Onion, but whatever you have a taste for would work.

    2 Large eggs, scrambled
    1 Laughing Cow wedge
    2 tbsp Salsa

    Scramble eggs and fold chunks of laughing cow wedge in, making an omelet filled with melty cheese, top with one small piece to melt over top and top that with 2 tbsp salsa- I use a locally made salsa.

    SO GOOD.

    (I don't tend to have a problem with sodium, I almost always stay below my limit...so not sure if that is a large #...but worth it!)
