I think I originally found a variation of this in a Weight Watchers Cookbook-just can't remember which one.
Polenta Eggs
2 1/2-in slices Polenta
1/4 cup canned black beans (drained)
6 Ts Thick & Chunky Salsa (I use Meijer Naturals)
1 T shredded cheese (I use Kraft Three Cheese-with A Touch of Philadelphia, any will work)
2 eggs, poached or fried without oil (non-stick pan works)
cayenne pepper, to taste
Fry polenta (without oil, use pan spray or non-stick pan), just until it's heated through.
In a saucepan combine remaining ingredients (except cheese) and heat.
And of course-poach the eggs.
Assemble Plate in this order.
Polenta slices, eggs, salsa mixture, and top with cheese.
When I added this to the MFP tracker these are the numbers I get back:

Here is one of my favorites from the Food Network. Very easy and perfect for snacks!
Black Bean Hummus
Ingredients
* 1 cup cooked black beans
* 1 garlic clove, minced
* 2 tablespoons olive oil
* 2 tablespoons lemon juice
* 1 tablespoon white wine vinegar
* 1/2 teaspoon ground cumin
* Kosher salt and freshly ground black pepper
* 1/2 head iceberg lettuce, cut into wedges
Directions
Blend all the ingredients in a food processor until almost smooth. Let sit for 15 minutes before serving.

I love to make this corn salsa for my salads. Sometimes I'll use some fajita spiced chicken on the salad and lite sour cream, sometimes just the corn salsa and lettuce. It's about 200 calories for a cup and yeilds about 5 cups.
1 can corn drained and rinsed
1 can black beans drained and rinsed
2 good sized tomatoes chopped
1 avacado chopped
3 green onions chopped
1 pepper (red, green, yellow or orange doesn't matter)
1 bunch of cilantro chopped
Juice of 1 or 2 limes to taste
Salt and Pepper to taste
2 jalapenos chopped if you like things spicy
Black olives if you like them
Mix it and chill it and you are good to go. :-)0 -
I got this recipe from a Weight Watchers cookbook (slightly adapted). I eat it for lunch almost every day. I find it really filling and satisfying!
Black Bean and Sausage Soup
Makes 8 1 cup servings
1 package Marc Angelo Turkey Sausage (around 500grams)
1 onion, chopped
1 clove garlic, minced
4 cups chicken broth
2 cans (15.5 oz) black beans (drained and rinsed)
1 can (15.5 oz) Chick Peas (drained and rinsed)
Cilantro (optional)
Peel the sausage and break up into pieces, fry over medium heat until cooked through. Set aside for later (I like to set mine on power towel to absorb extra oil).
In a stock pot cook the onion and garlic until translucent, around 5 to 6 minutes. Add the chicken broth and beans and bring to a boil. Turn heat to low, cover, and simmer for 8 minutes. Remove 2 cups of the bean and broth mixture, and blend until smooth. Return blended mixture to pot and stir well. Add sausage to pot and simmer for 5 minutes more, until meat is heated through. Remove from heat and stir in Cilantro.
Freezes well.

Black Bean Brownies
Yes they are made with Black beans But oh so yummy oh so moist oh so good and you get a pretty big brownie being that it makes 16 servings so you can cut them smaller for less calories.
Ingredients
* 1 (15.5 ounce) can black beans, rinsed and drained
* 3 eggs
* 3 tablespoons vegetable oil
* 1/4 cup cocoa powder
* 1 pinch salt
* 1 teaspoon vanilla extract
* 3/4 cup white sugar
* 1 teaspoon instant coffee (optional)
* 1/2 cup milk chocolate chips (optional)
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
2. Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
3. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

Just marking my place so I can find this again! So far, I have only made chili with a combination of black beans and pinto beans!0

Tex mex salad
1 can black beans drained and rinsed
1 can corn
1/2 cup salsa fresh or jarred
scallions and cilantro
I mix everything together and let sit in the fridge a few hours before serving
I also make black bean brownies
1 brownie mix (sugar free is what i use)
1 cna black beans rinsed and drained
Puree beans in food processor until smooth mix into brownie mix until blended. Bake 25 - 30 min.
Sometimes i throw black beans in a salad or on top of brown rice
sometimes i take a little olive oil and a clove of garlic and brown the it in the oil and pour that over a can of black beans and mix and serve over brown rice0 -
Jamaican Jerk Pork Chops
1-pound thick cut pork chops
2 table spoons Jamaican Jerk seasoning
2 tablespoons flour
2 tablespoons brown sugar
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1-15 ounce can crushed pineapple
1-15 ounce can black beans, rinsed
1 red bell pepper sliced
In a zippered bag combine pork chops, jerk seasoning and flour. Shake until coated. In a large skillet combine brown sugar, olive oil and vinegar. Heat and stir until sugar dissolves, then add coated pork chops. Cook over medium-high heat until internal temperature reaches 160°. Add pineapple and black beans to skillet and let simmer for 15-20 minutes.0 -

OK, this is a dessert not a meal, but have you ever tried BLACK BEAN BROWNIES!?! I've made them a few times - they are awesome! Just search for your recipe of choice, and be sure to rinse of the beans really well before mixing into the batter

This is one of my favorite recipes.
1 can black beans
1 can pinto beans I have used this recipe with just black beans as well.
1 can kidney beans
Frozen corn 1 cup
chopped onion 1 cup or a half cup depending on your taste.
lots of chopped cilantro ( I love the stuff)
You can also add green and red bell peppers chopped.
(I do not my hubby is allergic to them.)
Dressing
1/4 cup olive Oil
1/4 cup Vinegar
1 tablespoon of lime juice
1 tablespoon of Lemon Juice
1/2 tablespoon of cumin
1/2 tablespoon chili powder
1 clove crushed garlic
Mix all ingredients in a bowl except dressing. Combine dressing ingredients then pour over the bean mixture and evenly coat. Chill and serve. You can also had hot sauce to the dressing, The recipe is very versital. If you make it with all the ingredients it is very colorful and looks great in a glass bowl at potlucks.0 -
