    This is my favorite Crock Pot Recipe with Black Beans in It, its wonderful:

    Slow-Cooker Latin Chicken with Black Beans and Sweet Potatoes

    Ingredients
    * 3 pound(s) bone-in skinless chicken thighs
    * 2 teaspoon(s) ground cumin
    * Salt and pepper
    * 1 teaspoon(s) smoked paprika, or 1⁄2 tsp. chopped chipotle chiles in adobo sauce
    * 1/2 teaspoon(s) ground allspice
    * 1 cup(s) chicken broth
    * 1/2 cup(s) salsa
    * 3 clove(s) (large) garlic, crushed with press
    * 2 can(s) (15 to 19 ounces each) black beans, rinsed and drained
    * 2 pound(s) sweet potatoes, peeled cut into 2-inch chunks
    * 1 jarred roasted red pepper, cut into strips (1 cup)
    * 1/3 cup(s) loosely packed fresh cilantro leaves, chopped
    * Lime wedges

    Directions

    1. Sprinkle chicken thighs with 1/2 teaspoon ground cumin, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper. Heat 12-inch nonstick skillet over medium-high heat until hot; add chicken thighs and cook until well browned on all sides, about 10 minutes. Transfer chicken to plate. Remove skillet from heat.
    2. In same skillet, combine smoked paprika, allspice, chicken broth, salsa, garlic, and remaining 1 1/2 teaspoons cumin.
    3. In 6-quart slow cooker, combine beans and sweet potatoes. Place chicken on top of potato mixture in slow cooker; pour broth mixture over chicken. Cover slow cooker with lid and cook as manufacturer directs, on low 8 hours or on high 4 hours.
    4. With tongs or slotted spoon, remove chicken pieces to large platter. Gently stir roasted red pepper strips into potato mixture. Spoon mixture over chicken. Sprinkle with cilantro and serve with lime wedges.

    I JUST checked out a cookbook from the library that had a recipe for making brownies with black beans. It's actually a diet cookbook so it uses things like egg substitutes and stevia sugar and lowfat sour cream. One brownie is 58 calories! I have yet to try them but plan to. My husband is alreay thinking negatively about them so I will make them without telling him what's in them when I do.

    I try to used Black Beans at least 3 times a week...

    1 Tortilla (whole wheat) 120cal
    1/2 cup Cuban Style Black Beans (Trader Joes) 100 cal
    1/2 cup diced tomatoes (fresh) 40 cal
    1/4 Low Fat Mozz Cheese 100cal
    1/2 cup chopped and diced white onion

    Bake @ 400 for 8-10 minutes

    Topped with Taco sauce (30cal)

    Super Yummy and 390 cal!!!!

    I love to make Black Bean Salad. 1 can of black beans to about 2-3 C of diced veggies from the list below - depending on what you like or what is handy. I usually use 3-4 different veggies per batch.

    Tomatoes (de-seeded)
    Red Bell Peppers
    Green Bell Peppers
    Frozen Corn
    Carrots
    Red Onions
    Green Onions

    Then add salt and pepper, a few shakes of cumin, some garlic powder (or fresh) and 3-4 tablespoons of Italian or Balsamic Vinegarette dressing and mix it all up.

    It lasts for about a week in the fridge so it is great for lunch. I usually serve it as a side for fish for dinner one night and then take it for lunch poured over spinnach or just by itself or with pita chips if I have extra calories left.

    I made a delicious omelet this morning with 1/2 cup Eggbeaters filled with 1/2 cup rinsed black beans, 1/2 teaspoon cumin, 1 tablespoon feta and 1 teaspoon lime juice. Then rolled it and topped it with 2 tablespoons salsa and 1/2 packet of wholly guacamole. Soooooo good!! Only 253 calories and kept me going all morning long.

    You reminded me, I made a healthy Huevos Rancheros for a few meals several week ago. Used a vegetable frittata w/1 egg and 2 egg whites as a "base." On top of that I put a half cup of my refried black beans, then top w/whatever you want. I did a little bit of 2% cheese, sour cream and salsa. CRAZY filling and A LOT of food for about 350 cals.

    Black bean sauce is a special fermented product. You can buy it at the Asian markets---and I think even regular grocery stores, now. Look for a small jar in the Asian foods section. Lots of salt! (that's how it's made). I always find good recipes at epicurious.com

    My friend's family makes Bean Salad and I finally made it myself last night. So yummy!

    Basically,
    1 15 oz can of each black beans, kidney beans (I used pinto instead), and corn
    About a cup of bell peppers and onions
    Juice from 2 lemons
    Tons of cumin
    Some cilantro if you have some

    My friend says it's delicious as a salsa if you heat it up a bit and dip chips in it. I just like mine simple :)

    Southwest Ravioli Soup

    1 can black beans
    1 can sweet corn
    1 cup salsa
    2-3 cups water
    1 can reduced sodium chicken broth
    1 bag frozen cheese ravioil

    Drain & rinse beans and corn. Add beans, corn, salsa, chicken broth and water in a large pot. Bring to a boil, add ravioli and boil until ravioli are done.
    This is really good on a cold day, and the leftovers are great too. The ravioli will soak up a lot of the water so the leftovers tend to be less soupy.

    This one will amaze everyone but I swear these brownies (yes, I said brownies!) are to die for....

    Black Bean Brownies

    Per Serving: 97 Calories, 2.5g Fat
    Yield: Yields 30 brownies
    Ingredients
    • Nonstick cooking spray
    • 1- 15oz. can black beans, rinsed and drained
    • 6 egg whites or 1/2 cup fat-free egg substitute
    • 4 oz. unsweetened chocolate
    • 1 Tbs. light butter
    • 2 cups granulated sugar substitute
    • 2 Tbs. instant coffee powder (regular or espresso)
    • 3 Tbs. all-purpose flour
    • 1/2 cup chopped walnuts (optional)
    Instructions

    1. Preheat oven to 350 degrees F
    2. Coat a 9 x 13-inch pan with nonstick spray
    3. Blend drained beans and 2 egg whites (or 1/3 of 1/2 cup egg substitute) in food processor or blender until smooth
    4. Set aside
    5. Place chocolate and light butter in small microwave safe bowl
    6. Microwave for 60-90 seconds. Stir every 30 seconds until smooth. Set aside.
    7. Combine bean puree, sugar, flour, coffee powder and remaining egg whites or egg substitute in a mixing bowl. Beat until well combined.
    8. Blend in melted chocolate, pour mix into pan, sprinkle with walnuts
    9. Bake 30-35 minutes

    Black Bean Brownies
    Yes they are made with Black beans But oh so yummy oh so moist oh so good and you get a pretty big brownie being that it makes 16 servings so you can cut them smaller for less calories.

    Ingredients

    * 1 (15.5 ounce) can black beans, rinsed and drained
    * 3 eggs
    * 3 tablespoons vegetable oil
    * 1/4 cup cocoa powder
    * 1 pinch salt
    * 1 teaspoon vanilla extract
    * 3/4 cup white sugar
    * 1 teaspoon instant coffee (optional)
    * 1/2 cup milk chocolate chips (optional)

    Directions

    1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
    2. Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
    3. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

    I posted this recipe too but now can't find it! When I saw your post I thought I had to give it a bump! These brownies are to die for and so far no one who has tasted mine know the difference. Just don't tell them ahead of time or they will be reluctant to taste them.
