    Beans n rice!!!!!

    fry an onion, add salt/pepper, cumin and a little chili powder. throw in a can of black beans, 2 cups cooked brown rice, a handful of frozen corn, lime juice and some fresh chopped coriander.

    Mmmmmmmmmmmmmmmmmm so easy, tasty, and healthy.

    Black beans boiled with garlic, cilantro, cayenne pepper, sea salt, olive oil.

    Brown rice mixed with cilantro and butter.

    I put them in a bowl together. Yummmmy!

    So what does it mean when someone says 'bump' in a message?

    It's a way of "saving" the message so you can view it later without actually having to say anything in the post. That's the best I can explain it. HTH!

    Black bean and veggie quesadilla

    i use broccoli and corn. you could add your choice of veggies.
    cheddar cheese, salsa
    about 280 calories

    I like to just do a quick side:

    Drain black bean can and rinse (get rid of all that excess sodium!)
    In a small saute pan, mix garlic (to taste, I like mine chopped) and 1/2 diced white onion, saute until golden or translucent
    Add in black beans, stir for a few minutes.

    Voila! Simple, easy, tasty, goes with skinless chicken breast and some rice. So good.

    That makes sense. Thank you. The other day I found a thread I liked but had no immediate post for-took me half the next day to find it again! Now I know what to do next time.

    Texas Caviar ( Biggest Loser recipe)

    One 15-ounce can 50-percent less sodium black beans, rinsed and drained
    One 15-ounce can 50 percent less sodium whole kernel corn, rinsed and drained
    3/4 cup fresh salsa or pico de gallo (refrigerated, not jarred)
    2 tablespoons chopped fresh cilantro
    1-1/2 teaspoons red wine vinegar
    1 teaspoon cumin
    Salt, to taste
    Ground pepper, to taste
    Hot sauce, to taste
    In a large glass or plastic mixing bowl or a large resealable plastic container, combine the beans, corn, salsa or pico de gallo, cilantro, vinegar and cumin. Season with salt, pepper and hot sauce. Cover and refrigerate at least 2 hours or overnight before serving. Makes six 1/2-cup servings.

    Made this last night and threw in some leftover rice. Had leftovers today with shrimp but I had it hot instead of as a salad.

    Mango Chicken soup

    1 can black beans
    1 can navy beans
    1/2 bag of frozen boneless chicken tenders
    1 jar Paul Newmans mango salsa
    1/2 bag frozen peppers and onions
    2 cups water
    1 can white corn kernals

    cook in crockpot on high 6 hours or til chicken is tender

    serve with ff sour crm.
    reduced fat shredded cheddar cheese
    crushed white corn chips

    It is YUMMY!!!!!!

    1 package steamers brown rice
    steamers whole kernel corn
    1 can black beans drained and heated
    mexican flavor stewed tomatos (2 if you like it soupy)
    optional - ground turkey fried with reduced sodium taco seasoning mix

    cook all of above
    mix together while hot

    top w/ a modest amount of WW mexican blend cheese
    top w/ some plain greek yogurt
