    I was just thinking of doing this with the chicken... I got some on sale and it's in the freezer... Have to check to see if I've got the other ingredients :wink:

    I tried these last week and they were such a hit! My kids LOVED them, even my very picky 9 yr old ate it up and asked for more. And it's an excellent way to sneak in some extra veggies.

    Super easy to make too. We'll definitely be having these for dinner again!

    I LOVE THIS RECIPE....Now I make mine with my good ole' Granny's recipe revised, but we add squash, carrots, spinach sometimes, stewed tomatoes and all the other yumminess......pretty much the same recipe.............................I have shared it with all of my friends.

    Ok... so the kids complained about the meatloaf muffins, on the third time I made them. They don't want ketchup on the top... lol... I can do naked meatloaf muffins for them.

    My mom used to wrap her meatloaf in bacon. That was the best! I still don't know how she did it, because every time I tried it, my bacon burned. Kinda thinking I want to put a slice of bacon around my next batch of muffins, but it kinda kills the healthy idea, doesn't it?

    This was our dinner today and YUM!

    I used red pepper b/c I had no carrots left and used steak sauce instead of ketchup ontop of the "muffins".

    Very very good!

    You're welcome girl! This is a great "staple" recipe to have around! Easy and portion controlled too!!! :tongue:

    This was also OUR dinner today! BF was completely fascinated with the little muffins......he only at 1 1/2 with a half cup of mashed potatoes (the 88 cal ones) and was full! :noway:

    I didmt read through every page (so I dont know if this was covered) , how full do I fill the muffin cups? My family loves meatloaf, so do I, and I would love to know.
