    Good morning! So, my weigh-in holds at 169 :bigsmile: :bigsmile: :bigsmile: What a great feeling! I'm down 3.2lbs since Tuesday. I also had to adjust my goal weight because I met it :noway: So now it's bumped up to the 20% number rather than 15% and if I stay on track I'll make that number in the next week :bigsmile: So stoked!

  • Hey Chica's...Thanks for the congrats and kind words. :) I'm definitely back in action!! I even worked out yeseterday...say whaaaat? LOL. So woke up this morning...weighed in....185.2lbs...say whaaaat? Checked it 3 times...yep! So I lost an additional 1.6 since Wednesday...TOO Freakin CRAZY! So needless to say...this was a total motivator to stick to it!

    Rhiannon, way to go sister! I can't wait until I'm in the 160's again!! Man I bet you feel GREAT!
    Kristen, I hope you are doing better today. :(

    All you other girls...keep up the amazing work! You are total motivators for me!! I'm too excited, I might actually reach my goal!! I want to dye my hair sooooo bad (its my reward for hitting 180.0lbs....I almost did it last night, but I said...no...you have to reach your goal! OMG...I'm totally excited!

    Hello y'all! Greetings from the frozen tundra. Of course, Pedal might be colder, I'm not sure how far north in Canada you are. It was 3 degrees here this morning! Brrrrr.... The dog is going crazy, because I have the fireplace going, so it's hot in here, so she wants out, but it's too cold out there, so she wants in. I'm getting my exercise just walking to and from the door to let her in and out.

    So... Not entirely sure on my weight... I stepped on the scale and it said 194. I always double check, because it does depend on where I stand on it, so I stepped on again and it said 195.5 (after flashing at me that the battery was low). Third time, 194.5. So, I'm going to go with the 194.5, which puts me down a half pound from Tuesday. Of course, that half pound is also a half pound up from where I started, but at least the scale is starting to go in the right direction.

    I'll pop on later to post my foods. I have to get started on the cake I'm doing for tomorrow afternoon.

    Hi Ladies!
    So I am 177.6. No loss, but no gain and this week has been an emotional rollercoaster so i am good with it.

    Cass- 3lbs YAY! Good job!

    Deb-I have had a horrible week too. You are not alone on the dismal feelings....But don't forget you have us to lean on!

    Chipper-I am not sure on the servings of the black bean chix. The recipe is very vague...I'm sorry:( I hope you liked it though!

    Rhiannon-YAY 160! I can't wait to say that! So proud of you:) Have you done the 20 min run yet? And I love running outside so much better than on a treadmill.....its empowering and free!

    Amy - We miss you!! and yay for your loss!

    Shanell- I :heart: Ice cream cake! Good for you for enjoying your bday! I turn 30 in Feb....and i will be doing the same:) You still had a loss and thats awesome. Hey, can you come over and put my christmas tree up too? lol

    Rlh- love your new quote and really hit home with me this week. My family is in shambles right now because of my brothers idiocy and mistakes and yet he treats us like dirt....and says horrible things to me. I was so angry last night and then i saw that quote and thought. Oh HE** NO. He isn't getting the best of me! Thanks for that :) YAY on the loss!

    Lauryn - Running is the one thing that i can do that is MY time...it empowers me and shows me how strong i am. Keep up with the C25k girl. We :heart: you, and you will get thru this.

    Becky...here's some that I'm making:

    Pecan Cookies
    1 1/2 Cups Whole Wheat Flour
    1/2 Cup All-Purpose Flour
    1 teaspoon Baking Powder
    2 Tablespoons Quick Cooking Oats
    1/4 teaspoon Cinnamon
    1/2 Cup Fat Free Margarine Spread
    2 3/4 oz. Finely Chopped Pecans
    1/2 Cup Packed Brown Sugar
    1/4 Cup Fat Free Milk
    Powdered Sugar for sprinkling

    Preheat oven to 375 degree. In a large bowl, combine the flours, baking powder, oats and cinnamon. Cut in the margarine using a fork and mix well. Add the pecans and brown sugar; mix well. Stir in the milk and mix until you have a stiff paste. Turn onto a floured surface; knead lightly until smooth. Place a piece of foil onto a baking sheet (dull side up) and spray with butter flavored cooking spray. Scoop out 1 tablespoon of dough, roll it into a ball and then place it on the baking sheet. Space each ball about 2 inches apart. Spray the bottom of a glass with non-stick cooking spray and then dip into flour. Smash out each ball with the glass until they're about 1/4 inch thick. Bake for 12-15 minutes or until lightly browned. Cool on wire rack and sprinkle with powdered sugar.

    Serves: 26
    Per Serving: 72 Calories; 2g Fat (26.4% calories from fat); 2g Protein; 12g Carbohydrate; 1g Dietary Fiber; trace Cholesterol; 48mg Sodium. Exchanges: 1/2 Grain (Starch); 0 Lean Meat; 0 Non-Fat Milk; 1/2 Fat; 1/2 Other Carbohydrates. WWP: 1 (www.AimeesAdventures.com)
    Choco Cane Marshmallows
    16 Large Marshmallows
    6 Miniature Candy Canes
    4 ounces Chocolate Flavored Bark Coating

    Place a piece of wax paper onto a cookie sheet and set aside. Crush the candy canes into very small pieces and place into a small bowl. Melt chocolate in microwave according to package directions. Insert a toothpick into a marshmallow and dip the sides and bottom (leave the top uncovered so that you can pull the toothpick out without getting chocolate on your fingers). Shake off as much as the chocolate as you can, and then sprinkle crushed candy cane over the chocolate. Place onto wax paper and repeat until all marshmallows are covered. Using the back of your spoon, dip into chocolate and lightly brush the top of each marshmallow to cover. Sprinkle any leftover candy cane on top. Allow to set at room temperature until the chocolate is hard, then store in an airtight container. Tip: Use fresh marshmallows and refrigerate them before starting, this will help them keep their shape better. I drop one of these into my hot chocolate sometimes and stir it until it melts for a special treat.

    Serves: 16 (1 Marshmallow Each)

    Chocolate Peanut Butter Truffles
    6 oz. Mini Semi-Sweet Chocolate Chips
    1/2 Cup Reduced Fat Creamy Peanut Butter
    1/2 Cup Fat Free Evaporated Milk
    1/8 Cup Confectioners Sugar or Cocoa Powder

    Place the chocolate chips in a medium microwave safe bowl and microwave on high for 45 seconds. Stir with a spoon and microwave for another 45 seconds. Stir in peanut butter then whisk in the evaporated milk until the mixture is smooth and creamy. Cover and refrigerate for 1-2 hours or until the chocolate has become firm enough to roll into balls.
    Using a level tablespoon, scoop the mixture and form into balls. (It will be a bit messy, but I found washing my hands every few minutes helped keep too much from sticking to my hands). Roll each ball in confectioner's sugar or cocoa powder (I prefer the sugar). Refrigerate for 1 hour or more.
    Serves: 12 (2 Each)
    Per Serving: 132 Calories; 8g Fat (47.4% calories from fat); 4g Protein; 15g Carbohydrate; trace Dietary Fiber; 0mg Cholesterol; 76mg Sodium. Exchanges: 1 Fat; 1/2 Other Carbohydrates.

    Chocolate Meringue Cookies
    2 Egg Whites
    1/8 teaspoon Cream of Tartar
    2 Tablespoons Sugar
    4 Tablespoons Splenda Granular
    1/2 teaspoon Vanilla Extract
    2 Tablespoons Cocoa Powder
    Butter Flavored Non-Stick Spray

    Pre-heat oven to 240 degrees. Whip egg white and cream of tartar until soft peaks form. Add Sugar and Splenda a little at a time until stiff peaks form. Add vanilla and cocoa powder. Place a piece of foil dull side up on a cookie sheet. Spray with butter flavored non-stick spray. Place mixture by the teaspoon on the cookie sheet, or use a pastry bag, and make drops the size of Hershey kisses. The smaller you make them, the more you'll get. :) Bake for 40 minutes, and then turn the oven off keeping the door closed, and let the cookies sit for at least 1 hour to allow the insides to dry out. The longer you let them sit, the better. When they're done, just peel them off of the foil. Store in an airtight container. You can make any flavor of meringue cookies you like just by changing the flavor of the extract, but if you omit the cocoa powder, you'll also be omitting the fiber so you'll need to re-figure the nutritional information.

    Candy Cane Sugar Cookie Recipe
    Children young and old alike enjoy rolling out these festive candy cane cookies. Adults should be in charge of adding in the food coloring to avoid any major messes. For additional decoration, crushed peppermint candies can be sprinkled onto of the cookies as they are removed from the oven. Makes three dozen.
    Ingredients:
    2 3/4 cups all purpose flour
    ¼ tsp salt
    1 cup butter, softened to room temp
    1 cup granulated sugar
    1 egg
    2 tsp peppermint extract
    ½ tsp vanilla
    approximately ¼ tsp red food coloring
    Directions:
    1.Mix together flour and salt.
    2.In a separate bowl, cream together butter and sugar. Add egg and flavoring extracts. Gradually add in dry ingredients until well combined.
    3.Separate dough in half. Wrap one portion in plastic wrap and refrigerate for 3-4 hours until dough becomes firm.
    4.Add food coloring to remaining dough and mix until desired color is achieved. Wrap newly dyed dough in plastic wrap and refrigerate.
    5.To shape cookies, take spoonful of white and red dough each. Roll into 5" long ropes and coil together to create a candy-cane shape. Gently press down dough to flatten.
    6.Place on parchment paper and bake at 375 degrees F (190 degrees C) for 10-12 minutes.
    Holiday Sugar Cookies
    Ingredients:
    1/2 cup stick butter
    1 cup Equal Sugar Lite
    1 med. egg
    1 tsp. vanilla
    1 1/3 cup all-purpose flour
    3/4 tsp. baking powder
    1/4 tsp. salt
    1 pkg. Sugar Free Fruit Flavored Gelatin
    Preparation:
    Beat butter and Equal in medium-sized bowl on medium speed of mixer until well combined. Mix in egg and vanilla until blended. Add combined flour, baking powder and salt. Mix until blended.
    Drop dough by rounded teaspoons onto cookie sheets sprayed with non-stick cooking spray. Flatten slightly using a spoon. Sprinkle with sugar-free fruit flavored gelatin.
    Bake in preheated 350 degrees F oven 10-12 minutes. Remove from cookie sheet and cool completely on wire rack. Store in tightly covered container at room temperature.
    For rolled sugar cookies: wrap dough in plastic wrap and refrigerate several hours or overnight. Work with half of the dough at a time, keep the remaining dough in the refrigerator. Roll on lightly floured surface to 1/4 inch thickness. Cut with desired cookie cutters. Sprinkle with sugar-free gelatin. Bake in preheated 350 F oven 8-10 minutes. Proceed as recipe directs.

    Try our guilt-free treats. Many are low calorie; others are nonfat or made with whole grains and good-for-you ingredients like dried fruit and antioxidant-rich nuts.
    1 cup(s) all-purpose flour
    1 cup(s) whole wheat flour
    1 tablespoon(s) ground ginger
    1 teaspoon(s) baking soda
    1/2 teaspoon(s) ground cinnamon
    1/2 teaspoon(s) salt
    1/2 cup(s) sugar
    6 tablespoon(s) trans fat-free vegetable oil spread
    1 large egg
    1/2 cup(s) dark molasses
    Nonpareils or round white sprinkles (optional)
    1.On sheet of waxed paper, combine whole wheat and white flours, ginger, baking soda, cinnamon, and salt.
    2.In large bowl, with mixer on low speed, beat sugar and vegetable oil spread until blended. Increase speed to high; beat until light and creamy, occasionally scraping bowl with rubber spatula. Beat in egg and molasses. Reduce speed to low; beat in flour mixture just until blended. Cover dough in bowl with plastic wrap and refrigerate 1 hour or until easier to handle (dough will still be slightly sticky).
    3.Preheat oven to 350 degrees F. With lightly greased hands, shape dough by heaping measuring teaspoons into 1-inch balls. If you like, dip top half of each ball in nonpareils. Place balls, 2 1/2 inches apart, on ungreased cookie sheet.
    4.Bake cookies 9 to 11 minutes, or until tops are slightly cracked. (Cookies will be very soft.) Cool cookies on cookie sheet on wire rack 1 minute. With thin metal spatula, transfer cookies to rack to cool completely. Repeat with remaining dough.
    5.Store cookies in tightly covered container at room temperature up to 3 days or in freezer up to 1 month.

    Hi Ladies,

    Wow!! You all are doing so good. I weighed in this morning over 200 again 201 to be exact so I am up 1 pound from monday. I was doing pretty good so that was a bummer. Today I did not do so well, kind of felt like throwing in the towel today. I will try to do better tomorrow, but after Monday finals I will be able to focus much better.

    So... another day not going to the gym... It's kind of nice to take a break, but I think I'm going tomorrow after I deliver this cake. But, I stayed close to my calories, and have even managed not to eat any of the cake that fell apart as I popped it out of the pan :grumble: Just pulled the replacement for that cake out of the oven, but am really tired, so I think I'm going to go to sleep soon, and just get up at the butt crack of dawn to frost the thing and put it together.

    Even though I didn't go to the gym, I stuck pretty close to my calories, including pizza and jalepeno poppers for dinner. I just broke out my calculator and figured out what the calories were per slice (the box had it for 6 slices, we cut into 8), plugged everything into the computer and viola, I was only over by 33 calories. I probably could have been right on, but I mixed a cup of lowfat chocolate milk 50/50 with skim. If I stuck with the skim, it would have been under, but mmmm... the chocolate was worth it!

    Breakfast
    Kashi - Go Lean Cereal, 1 cup 140 calories

    Getting ready to take a beak and do the Shred DVD with my new weights!! woohoo!!

    Thought I would share the recipe I had for dinner tonight. Haven't added up the calories yet and not so sure its that great but I was low on calories today anyway. My mom has made this dish for years and it is soooo yummy. Dorothy Lynch is a french-like dressing that is made in Nebraska (where I'm originally from) so it may not be available everywhere. Sorry!! Oh and i usually cut this in half with just 2-3 chicken breasts.

    Apricot Chicken

    1 c. Dorothy Lynch Salad Dressing
    1 c. apricot preserves
    1 envelope onion soup mix.
    4-6 chicken breasts, thawed
    Brown rice

    mix together dressing, preserves and onion soup mix. place chicken in casserole dish and cover with sauce mixture. Bake at 325 degrees for 1 1/2 to 2 hours. Serve over brown rice.

    Love it Cathy. So true so true. I feel good about this morning, got up and jumped right onto the tredmill and plan to do the same tomorrow. I got a good night's sleep and that always helps too. Thanks for everyone being so understanding about this time being hectic studying for finals. So, I'm off to study more.

    Where is my duct tape? I have had so many licks and dabs of frosting in my mouth... and chunks of cake....

    I need to duct tape my mouth shut! I don't think I'm ever going to get the d**n cake done. I just had to rebake the center layer (again!) that I rebaked last night. We now have two messed up cakes in the house!

    I got up at 3:30 this morning to work on the cake, and thought about eating breakfast before... but thought I wasn't hungry, so put it off for a while. Here it is noon, and I still haven't eaten, probably why I've been so dippy into the sweet stuff. I'm going to eat lunch while this layer is cooling, then get this stooooopid cake put together.

    Sorry, just needed to vent...

    Hey ladies! I decided to jump on here this morning. (Even with my SLOW dial-up!) Went to spinning this morning...YAY! And burned almost 700 calories! Then home. Ate a yummy omlet with egg beaters, mushrooms, alfalfa sprouts, fat free mozzarella, and salsa. YUM! Also had a banana and Kashi baked apple spice bar. AND my coffee. But feeling great and weighed again this morning (I know I know) but am back down and even lower so I know the added weight on Friday is not staying. YAY! Anyways...off to do laundry and some cleaning and baking!!!! YAY! Have a great day ladies and if I don't get back on this weekend, I'll catch up on Monday!!!!

    Just a quick hello! We're heading off to the Childrens' Christmas Party for Kyle's work soon but I've got a 1000 calorie cushion for the lunch they serve so I should be okay. I've read posts but not time for personals... check in later! :bigsmile:

    It's wonderful, you just type in the recipe ingredients, and it figures up the calories for you! So easy! I just did it for the frosting that I make, because I figure all those licks, dabs, and tastes added up. I guestimated that I ate a half a cup throughout the day... and plugged those calories in. It's ugly, very ugly!
