Hello everyone!!

YES YES its me again..:D Still daydreaming about fall, still thinking of ways to make it get here QUICKER!! (do you think if I start to bring out my fall boots/sweaters/etc. it will come faster!?) :D

Anyway, I thought it would be fun to share PUMPKIN ideas...either recipes, store finds, etc...

I know I said it the other day, but I've been REALLY enjoying my

pumpkin coffee...I make regular black coffee, add some sugar-free pumpkin syrup and splash of unsweetened almond milk..AHHHH so good!!

Also, I've made my 'banana pancakes' using PUMPKIN as well...SOOO delish!! (just egg white, 1/2 banana, a scoop of pumpkin puree, and a sprinkle of cinnamon, mixed together and on the griddle like a pancake!) :D

    I've done the pumpkin pancake thing... 1/4 cup pumpkin, 1/4 cup oats, 2 egg whites, cinnamon, brown sugar (if you want), and baking powder. Less than 200 calories and goes GREAT with Justin's All Natural Almond Butter. Such a filling and hearty breakfast for those high intensity workout days.

    I stir pumpkin into my oatmeal with cinnamon and honey. Makes it feel like autumn every time...

    I'm an autumn junkie, so I have plenty more recipes but I have to check the calorie content. Hold that thought... Lol.

    Totally not healthy but every fall I go crazy for pumpkin chocolate chip muffins. Mmmm with a pumpkin spice latte is perfect.

    My favorite pumpkin recipe, Pumpkin Whoopie Pies, is definitely not friendly to my new healthy way of eating, unless I make a batch and give away 99% of it. :)

    I LOVE Green Mountain's Pumpkin Spice Coffee, I'm anxiously awaiting it's re-release this month. Also love pumpkin bread and pumpkin pancakes/waffles. I just need to find a way to make them healthier than I used to make them.

    Spiced cider:

    apple cider
    Captian Morgan
    Orange ( or two )
    Cinamon sitx or ground cinnamon

    Cooke cider over stove slowly
    Pour in a gang of Captian
    Add orange slice & cinnamon
    Heat slowly

    Drink and warn yourself up till you have a nice little buzz :) I would also wear fuzzy socks and leggings while drinking this.

    It's not a pumpkin (obviously), but I'm SO ready for baked acorn squash!! This will be my first fall watching my intake so I'm hoping I can limit my pumpkin spice lattes...

    Yumm!! i found a recipe for a 'pumpkin smoothie' using chocolate shakeology...so I'm TOTALLY going to try it..it sounds similar to this!!:D

  • I love fall!!! It's my fav season. Plus, it has my fav holiday - halloween!

    My snacks & meals are the pumkin protein shake (already mentioned), roasted pumpkin seeds ( spinkle on an oven sheet, sprinkle on olive oil & spices & toast em up @ about 350) & my lil treat if I have been good Sweet & Sara Rice Kirspies which are vegan :) So good!

    Pumpkin muffins -
    I used to make these a lot when I was on weight watchers.
    1 box spice cake mix
    1 can pumpkin - 15 oz
    1 cup water

    Mix well. Put into muffin cups. Bake at 350 for 20-25 min. Makes 24 muffins. Oh so yummy!!

    You'll love this one!!! Pumpkin Mousse

    15 ounces canned pumpkin
    2 (3 1/2 ounce) boxes fat-free sugar-free instant vanilla pudding mix
    1 3/4 cups skim milk
    1 teaspoon pumpkin pie spice
    2 cups fat-free whipped topping
    Directions:
    Combine pumpkin, spice, and milk in a mixing bowl. Mix until smooth. Add pudding mix and beat for 1-2 minutes. Fold in whipped topping. Chill well before serving.

    Pumpkin Cranberry Bread


    Ingredients
    1 1/2 cups Pumpkin (canned)
    1 cup Granulated White Sugar
    1/2 cup Water
    2 tbsp Ground Flaxseed Meal
    1/4 cup Canola Oil
    2 cups White Whole Wheat Flour
    2 tsp Baking Powder
    1/4 tsp Baking Soda
    1/2 tsp Salt
    1 tsp Cinnamon, Ground
    1/2 tsp Ginger, Ground
    1/2 tsp Nutmeg, Ground
    1 cup Fresh Cranberries


    Directions

    Preheat oven to 350° F. and grease a loaf pan, 8 1/2 by 4 1/2 by 2 3/4 inches.
    In a large bowl with an electric mixer beat together pumpkin, sugar, water, flax meal, and oil. Sift in flour, baking powder, salt, baking soda, and spices and stir just until batter is smooth. Stir in cranberries and spoon batter into loaf pan, spreading evenly.
    Bake bread in middle of oven 1 hour and 15 minutes, or until a tester comes out clean, and cool in pan on a rack 10 minutes. Turn bread out onto rack and cool completely. Bread may be made 4 days ahead and chilled, covered.
