    I am so eager for Fall to start that I just painted my toenails a pumpkin orange.

    I also have a recipe for pumpkin cookies that I got out of a Cooking Light magazine. They are so good. I make them every holiday.

    Martha also makes one, but I haven't checked the calorie breakdown yet.

    bump!! just stocked up on canned pumpkin today. if the "Spartan" store brand is available in your area, check it out! It has less calories per serving than Libby's.

    I'm so excited for fall and all the pumpkin recipes. Here's a couple that I have.

    Pumpkin Butter

    Ingredients:
    3½ cups pumpkin puree, or 1 (29oz.) can
    2 tsp. vanilla extract
    ¾ cup apple juice
    1 cup packed brown sugar
    3 cinnamon sticks
    2 tsp. pumpkin pie spice

    Directions:
    Combine pureed pumpkin, vanilla, apple juice, cinnamon sticks and sugar in a large saucepan.
    Stir well and bring to a boil.
    Reduce heat and simmer for 30-40 minutes or until thickened.
    Stir frequently.


    Skinny Pumpkin Spice Iced Latte

    Ingredients:
    1½ cups milk
    2 tbsp. pumpkin butter
    2 tsp. vanilla extract
    ½ tsp pumpkin pie spice
    2 tsp. sugar or sugar substitute
    ½ cup coffee, chilled
    Cool whip

    Directions:
    In a small pan, combine milk, pumpkin butter and sugar and cook on medium heat, stirring, until boiling.
    Remove from heat and stir in vanilla.
    Whisk until smooth.
    Refrigerate or serve over ice.
    Top with cool whip and pumpkin pie spice.


    Pumpkin Oatmeal Shake

    Ingredients:
    ½ cup quick oats
    2 cups water
    1 cup milk
    1 cup ice
    ½ cup pumpkin puree
    3 tbsp. brown sugar
    2 tsp. cinnamon
    2 tsp. pumpkin pie spice

    Directions:
    Cook oats and water in a small pot for a minute or two, stirring often until it becomes thick and bubbly.
    Remove from heat and let it cool for a few minutes.
    In a blender, add milk, pumpkin, brown sugar, cinnamon, pumpkin pie spice, oats and ice.
    Blend on high until very smooth.
    Chill in refrigerator or pour over ice.


    Pumpkin Spiced Crepes with Pumpkin Butter

    Ingredients:

    1½ cups fat free milk
    2 large egg whites
    1 whole egg
    1 tsp. oil
    1 tsp. vanilla
    1 cup whole wheat flour
    1 tsp. cinnamon
    2 tsp. pumpkin pie spice
    Butter flavored spray
    1½ cups pumpkin butter (2 tbsp. in each crepe), warmed
    Cool whip (optional)
    Powdered sugar (optional)


    Directions:
    Blend flour, milk, cinnamon, pumpkin spice, eggs and oil until smooth in the blender.
    Spray non-stick onto medium heat skillet.
    Pour ¼ cup crepe mixture into pan, swirling to make thin and smooth.
    Cook for 1 to 2 minutes or until bottom is light golden brown.
    Flip and cook for 30 seconds to 1 minute.
    Repeat.
    To serve, spoon 2 tablespoons pumpkin butter into center of each crepe. Fold the edge of the crepe over filling and roll, placing the crepe on a plate seam side down. Top with a scoop of pumpkin butter and sprinkle lightly with powdered sugar and little more pumpkin spice or cinnamon.

    I add 1/4 cup of canned pumpkin to my Fage greek yogurt, mix it up and add a dash of pumpkin pie spice and a little Stevia. Pumpkin yogurt!! Yum!
