    Pot Roast- a French flair version

    3-4 lb of pot roast beef (Chuck or blade)
    Large onion (sliced on bottom of cooker)
    A cup of coffee (strong)
    1/4 cup of balsamic vinegar
    1 1/2 c beef broth

    Cook on low 6 hrs or more (just add more liquid)

    Thicken sauce after cooking (use a cup of cold water with 5 TBSPs of flour and cook in saucepan until thick) (or use cornstarch, but I don't know the technique (google))

    Serve with carrots, potatoes other veggies

    Are you thinking of the Cheeseburger Crockpot one? If so it might be in it's own thread... let me know if that's what you're looking for and I'll try and hunt it down for you tomorrow when I'm back online. :flowerforyou:

    Oh and yes you can bake in the Crockpot, anything from applesauce to cake and well, pretty much everything you can imagine.:drinker:

    Chicken salsa :)
    Chicken breasts + salsa (1 cup maybe?) in a slow cooker, on low for 6-8 hours. Yummmmmy. 4 hours on high!

    I love using my crockpot! I probably use it twice a week (usually just on weekends when I'm home).

    The hand's down, favorite crockpot meal in my house is Carne Guisada. It's the best beef stew I've ever tasted in my life, and make that aji picante sauce - it brings it over the top.

    Chicken Enchilada soup is a close second. We use chopped zucchini in place of beans.

    I make this Chicken Cacciatore with mushrooms probably once every six weeks. I keep it frozen in portions at all times. My husband thinks it's the best, and I eat it for lunch pretty often at work.

    Turkey picadillo I also make and freeze. Sometimes if I'm super hungry, I pull a cup and mix it with sauteed cabbage for "crack"slaw

    This Chicken Tikka Masala - easy and really good.

    White bean soup cheap and more flavorful than you'd think.

    This Thai coconut chicken soup is also really good and has a lot of vegetables in it. The only thing is I hate to bring it to work because I don't like the smell of fish sauce permeating my office, lol.

    I love my buffalo chicken burgers..I throw frozen chicken breasts with half a bottle,or so depending on how many chicken breasts your doing, of franks red hot and let it cook on low all day
    Eat it with lettuce and tomato and fat free ranch on a whole wheat bun
    It's so good if you like a bit of a kick

    Ingredients

    2 pounds boneless leg of lamb, trimmed and cut into 1-inch pieces

    (It's Delicious!! And the meat turns out SO tender!)


    Balsamic Chicken

    Ingredients:
    4-6 boneless, skinless, chicken breasts
    2 14.5 oz can diced tomatoes
    1 onion thinly sliced (Not chopped)
    4 garlic cloves
    1/2 cup balsamic vinegar
    2 tblsp olive oil
    1 tsp each: dried oregano,basil, and rosemary
    1/2 tsp thyme
    ground black pepper and salt to taste

    Preparation:

    Pour the olive oil on bottom of crock pot
    place in chicken breasts, salt and pepper each breast
    put sliced onion on top of chicken
    then put in all the dried herbs and garlic cloves
    pour in vinegar and top with tomatoes

    Cook on high 4 hours, serve over angel hair pasta.

    (this can also be slow-cooked over 8 hours. I added a bit more balsamic than called for, plus some fresh spinach under the onions and tomatoes, and it was wonderful!)

    I like to cook the chicken the day before and put the cooled broth in the fridge and then the next day skim the fat off the broth and then make the recipe.

    Slow Cooker Pulled BBQ Chicken

    This recipe serves 8

    Ingredients

    1 tablespoon paprika
    1 teaspoon chili powder
    1 teaspoon ground black pepper
    1 teaspoon garlic powder
    1 teaspoon salt (optional)
    1 whole chicken, cut into 8 pieces, skin removed
    1 medium onion, diced
    1 cup reduced carb or reduced sugar barbeque sauce
    8 large lettuce leaves
    2 cups shredded cabbage

    Instructions

    Combine paprika, chili powder, ground black pepper, garlic powder, and salt (optional) in a bowl. Add chicken pieces and toss to completely coat chicken.

    Add chicken and onion to a slow cooker and set to low for 5-6 hours.

    Remove chicken from slow cooker and set on a cutting board or in a bowl to rest for 15 minutes. Take any remaining liquid and onions from slow cooker and mix with the barbeque sauce, set aside.

    Pull chicken and shred with a fork. Discard bones.
    Mix pulled chicken with barbeque sauce and onion mixture.
    To build the sandwich, add a heaping ½ cup of chicken to a lettuce leaf and top with ¼ cup shredded cabbage.

    Slow-Cooker Flank Steak Tacos

    This Recipe Serves 12

    Ingredients

    1 ¼ pounds flank steak
    2 teaspoons chili powder
    1 teaspoon cumin
    1 teaspoon garlic powder
    1 lime, juiced
    ½ cup water
    12 (6-inch) corn tortillas
    ¾ cup pico de gallo

    Instructions Place the flank steak in a slow-cooker. Sprinkle the meat with chili powder, cumin, and garlic powder. Pour the lime juice over the steak. Pour in the water. Cover and cook on low for 6 hours or until done. Shred the steak with a fork. Scoop about 1 ½ ounces steak into each tortilla. Top each taco with 1 tablespoon pico de gallo.
