    I wanted to do something different than a usual taco mexican night, so I decided to make a casserole.
    It was super super easy and is only 235 calories per serving (1/8 of a 13x9 baking dish).

    -1 lb lean ground turkey (I used 93/7)
    -1/2 an onion
    -taco seasoning
    -4 (1/2 cup) servings brown rice (I used Uncle Ben's Quick cooking natural)
    -1 15oz can diced tomatos (or use fresh)
    -1/2 cup enchilada sauce
    -5 oz. mexican shredded cheese

    First, cook the rice. While the rice is cooking, you want to dice the onion and sautee it in a pan, then after about 2 minutes, add the ground turkey and brown it. When cooked, add the taco seasoning.
    Open the tomatoes and drain.
    Now it's assembly time.
    Take the rice and spread it in a 13x9 pan, then take half the enchilada sauce and pour on top. Continue with the ground turkey, and then tomatoes (next time I am going to add black beans too, and you can add corn or any other vegetables you wish). Finish by topping with the rest of the enchilada sauce. Bake at 350 for 10 minutes and then take out of the oven and top with the cheese. Put it back in the oven for a couple minutes to melt the cheese, and voila!
    I topped mine with sour cream and some avocado, just use whatever you like :)

    Just made this with a few modifications: I added black beans & corn and used a can of rotel in place of the tomatoes. It was awesome! Thanks for sharing! : )
