I think making actually cupcakes that are more caloricly dense but are made of real ingredients would be better for your body than throwing together two highly processed ingredients.

OK - I'm confused. Did you use a regular box of cake mix with the diet soda? If so, how is it coming out to 19 calories? My box of PIllsbury Yellow Cake Mix says 170 calories for 1/12 of the box. So if I multiply 12 x 170 and divide by 48 cupcakes, I come out with 42.5 calories. What am I doing wrong?

    OMG! Want to try!!

Has anyone tried this with stevia-sweetened diet pop? I can't take other artificial sweeteners for medical reasons, but I can tolerate stevia. Wondering if it would work with stevia cream soda or if the slight licorice flavour would be too overpowering!

Oh my god.. I saw some stevia pop at the health food store...I am going to try it TONIGHT!

  • Love the cupcake idea.

Here is another quick receipe that is healthy and fairly low in calories when you want something sweet:

1 Keebler Reduced fat graham cracker crust
    1 container - Cool Whip - Fat Free/Sugar Free
1 pkg Fat Free/Sugar Free pudding (you choice of flavor - I like chocolate, but have also made with banana & vanilla)
    1 cup skim mik
Fruit of your choice - rasberries, blackberries, strawberries (I usually cut then in slices), etc..

Mix the pudding & milk together. Fold in the cool whip and fruit. Put in your crust and FREEZE.

Cut and enjoy LITTLE frozen slices for a snack or desert after dinner.

There are so many options with diet soda cake/cupcake recipes. I usually make mine into a 9x13 cake but love the idea of using mini muffin tins. I love devil's food and coke zero/diet coke but you could make...lemon cake and sprite....orange cake and orange soda...pineapple cake and sprite...carrot cake and cream soda it goes on and on lol!

A previous poster asked if there is any diet soda taste in the finished product, and I'd like to know the same thing. The concept sounds interesting, but I'm not keen on having a cake that tastes like pop.

If you are worried about an after-taste, you could substitute club soda for the diet soda. It will come out the same.

for the diet soda cakes and cupcakes, is it really 19 calories per serving?

i said something about it on babygaga, and i was told they were 400 cals per serving..which i dont believe since you're using diet soda.

i got confused after i was told that :/
