    I had this for lunch today and it was delicious! I will be making this again. I didn't use the oil. I used nonstick cooking spray when I cooked the sweet potatoes.

    I was using leftover chicken breast and I didn't have quite as much as your recipe calls for. I had a smallish sweet potato and I ate both halves. It was 400 calories for the whole meal (2 halves stuffed) according to the recipe calculator on here. It was a really filling meal too--and I don't say that too often lol.

    This sounds amazing. Minus the cheese and the olive oil (sprays work just as well imo) it's just under 200 calories per serving (according to the MFP recipe calculator). Much more on plan for me. Thanks for the idea!
