    Yess, this thread is alive again
    I already posted this in another thread, but here's what I had for lunch today:

    Spicy tofu, shredded stirfry potatoes, seasoned eggplant with tomato, and some bok choy.. threw all this into a giant plate along with some brown rice. White peach for dessert :)

    Homemade seitan, baked sweet potato and broccoli! 46g protein and not a single speck of protein powder in sight! Take that, haters :)

    I suppose it would be in poor taste...but really yummy taste... to post a photo of a Snickers bar, if I knew how to post photos. Sorry, I couldn't resist posting this. Just a little levity to brighten my night.

    In truth, though, many of these meals sound pretty flavorful and show what great options are out there by creatively mixing ingredients so you don't even miss the meat.

    Yum! Have been looking for some new inspiration and found it here. I've been a vegetarian for 20 years, and you get into a rut sometimes. I'm looking forward to trying many of these!! Keep em' coming!!
