A stir-fry of mushrooms, carrots, green beans and pineapple atop brown rice (sauce is made with pineapple juice and tamari).
Mandarin Chickenless bites atop braised kale with sides of sauteed mushrooms, roasted cauliflower with garam masala, and a cut-up apple.
Fake beef and broccoli with pineapple, brown rice with steamed green beans, spinach salad with raspberries and almonds, grapes, and a bit of pepper and onion confit.
Butternut squash and apple soup, roasted red potatoes with lemon and dill, sauteed mushrooms in a diet Coke (yep!) sauce, orange glazed carrots.0 -

This thread is awesome! I don't have a picture, but I make a Mexican pepper casserole that my carnivorous boyfriend loves. It is from a Moosewood cook book. And it only has a few ingredients
4 Large any color peppers
1 medium onion
2 cloves garlic
2 cups sour cream or yogurt
2-3 eggs
Slice the peppers, onions and garlic. Saute over medium heat until soft. Add to bottom of 9x13 pan. You can use a smaller one if you would like a thick casserole.
Beat the eggs into the sour cream. I like to use low fat yogurt once and a while.
Pour sour cream mixture over peppers.
Place in oven at 400 for about 40 minutes.
You can add in other spices like cayenne, thyme, mustard, or even some chicken if you want. Feel free to experiment!0 -
