    I make it into a breakfast bake, quinoa, vanilla silk, and either chopped apples and cinnamon, dried cranberries, or really any fruit combo that you like baked! Alternate liquids to cook it in are no sugar added fruit juices (was DELICIOUS with pure apple juice!)

    I love making jambalaya (I make a veg version with tofu, veggie dogs, and button mushrooms) with quinoa instead of rice. I find the quinoa is more "earthy" and the flavour is so much better than rice with those spices.

    Ohh there are some great ideas on this!

    I like to cook mine in a rice cooker then let it cool. After it is cold I add feta, kalamata olives, diced red onion/tomato/cucumber with a little salt & pepper. SO good! :drinker:

    I like to make quinoa cakes with a fried egg on top...

    For the cakes:

    1 cup cooked quinoa
    3 egg whites
    1/4 c panko
    2 oz shredded cheese
    minced garlic
    chopped green onion
    salt and pepper to taste

    Divide mixture into four patties and refrigerate until very cold

    Fry in PAM spray very delicately until golden brown on either side.

    Top each cake with a fried egg.

    The cakes themselves I believe are around 160 cal each.

    I throw in some fresh chopped garlic, a handful of chopped onions, a handful of pineapple chunks, about 3 TBS of low-sod soy sauce, a TBS of honey a 10.75 oz can of golden mushroom soup and a quarter cup of water.

    I mix this concoction with a potful of prepared quinoa. It's yummy! :smile:

    I roast diced sweet potato with a little olive oil and salt and pepper. Then at the end of the roasting I add in some spinach with olive oil and roast that a litte.

    Then I boil up the quinoa per package and mix that with all of the sweet potato and spinach and then add in some goat cheese and put it all on top of a roasted portabello mushroom :) SO GOOD
    This sounds good!
