I love it plain with a bit of salt and pepper. I also love it with any of the following in it:
tomatoes
avocado
carrots and celery (sliced thin)
potato chips (adds a salt crunch)
peaches
pineapple
kiwi
apples
mixed tropical fruit
cherries
strawberries
blueberries
This recipe is yummy, you may want to season it up more it's a bit bland if you just follow the recipe:

Fluffy Pancakes
2 extra large eggs
1/4 cup cottage cheese
2 Tablespoons cream cheese (laughing cow's)That is my idea here.
pinch of sugar substitute ,
1 Tablespoon wheat germ
1Tablespoon rice flour or Wondra
1 teaspoon baking powder
pinch of baking soda
Whip the eggs in a food processor or by hand until frothy. add the cheeses and beat until smooth. Add a little artificial sweetener. Add the rest of the ingredients and pulse to blind. Gently scrape the batter onto the griTddle about 10 pancakes. cook over medium heat until the edges of the cakes are set and large bubbles appear across the surface,about 1 minute. Carefully flip them and cook for half as long as on the first side or until golden. Serve on heated plates, with a drizzle of dietetic maple syrup or berry syrup . per serving 10 grams carbohydrate, 13 grams protein

i just bought non-fat cottage cheese because i feel like a lot of people use it in recipes..except i don't know what to use it in! haha. how do you guys enjoy it? i know a lot of people just put fruit in it. i think i've seen pancake recipes that call for it too??

1 scoop vanilla protein powder
1 full graham cracker
1/4 -1/2 cup almond milk
blend it all together (yes the graham cracker too) and enjoy. It really is like drinking a blueberry cream pie.0 -

3 egg whites
vanilla
cinnamon
put it in a blender, mix and pour onto a hot lightly sprayed pan or griddle
flip when there are bubbles
makes about 3 pancakes

I like it with black pepper on it, by itself. Or with Mrs. Dash seasonings.
I've never eaten it with fruit.
The only other way I've eaten it was in lasagna.

I make something I call chocage cheese. Basically I put some cottage cheese in a bowl. Add cocoa powder. Add a packet of sweetener. Mix it like crazy. Mouthgasm.0

I like the enchilada idea. I just toss mine on salad or add in fruit. But I do like the idea of the chocage cheese...sounds like something I may have to try tonight pryroron. Craving like crazy here today!0

You can just eat it by itself, use it in muffins and pancakes, or mix it with fruit and eat it! It's so good! It add protein to smoothies too.0

We have some in the fridge because we have been using it in our pancakes. I'm gonna have to get some more and try some of these yummy ideas!!0
