    I loved reading your dinners, guys! These threads are the best.

    I tossed some chicken into buttermilk marinade this morning (1.5 cups lowfat buttermilk, 1 tbsp paprika, S&P to taste) and we are grilling it tonight. Going to steam some yellow squash and zucchini and have a large spring mix salad, too.

    Roast pork tenderloin, green beans....the b/f will get white potatoes (today I am going "whiteless") and I will have a little cottage cheese.

    Kind of like a green bean casserole with some extra stuff to make it a meal

    Making a pot of quinoa, edamame, and white kidney beans that'll be the staple for this week's dinners. Probably will have a salad with tuna on the side or some steamed veggies, it shall vary.

    Too hot to cook here plus been doing yard work and cleaning the grill and furniture on the deck so I can start sitting out at night. So that said I will be getting something from subway. At least that will be fast and healthy.
  • Lasagna and salad...I'm on the hunt for a delicious lower fat lasagna recipe!

    Anyone have any ideas for me? :)

    I made a spicy pinto bean and turnip green casserole. It was an experiment - we'll see how it turns out! Also having a spinach salad and piece of homemade challah on the side.

    Hot dogs and baked potato fries with cheese and sautéed onions and walden farms bacon ranch dressing. It's my good version of being bad :)

    Boneless, skinless chicken thighs cooked in the dutch oven with mesquite and lime 30 minute marinade, shredded and served on lettuce with shredded cheese, salsa, and sour cream. I wish I had an avocado and a couple of tomatoes. Might run to the store . . .

    We have some beautiful tomatoes...so tonight is bacon lettuce and tomato sandwiches....light on the bacon, heavy on the tomato. So looking forward to it!

    Very simple and easy tonight. Grilled lean burger (plain, no condiments or bun, just sea salt and cracked pepper), steamed broccoli (my FAVORITE) and some Campari tomatoes.

    Cooking Light's chicken & pasta salad.

    My brother and his wife come over on Sunday nights. We put our kids to bed before they get here and after dinner we watch a grown up movie. Such a great way to end the weekend!

    I bought frozen tilapia tonight... I know it isn't as great as the fresh stuff, but I am getting tired of chickena and turkey burgers! I think I will bake them in the oven with a little garlic and lemon and a giant salad. Sounds yummm.

    Tonight I'll be having something pretty similar.

    it's a sort of vegan stirfry I made up
    olive oil, garlic, red onions, portabello mushrooms, asparagus, brocolli, zuccini, and Gardein Beefless Tips all fried up with some soy sauce over quinoa! Can't wait for dinnerrrr!
