    I've been debating sharing this so, since someone asked, here is my favorite salad. I want to start by saying anything can be tweaked or left out. This is just the way I usually make it.

    2.5 cups green or red leaf lettuce
    .5 cup diced cucumber (I leave the skin on)
    .3 cup red or yellow or orange sweet bell pepper
    3-5 scallions (green onions)
    1 Tbsp minced jalapeno
    2 Tbsp fresh cilantro

    Dressing:
    2 Tbsp unseasoned rice vinegar
    1 packet stevia
    1 tsp soy sauce
    1 tsp to 1 Tbsp (depending on my calories available) Sesame oil (or none)
    (you can use seasoned vinegar and leave out the stevia, it's a little different but close. I like it with the stevia and unseasoned because there are no calories)
    I usually put the vinegar and stevia in the microwave for about 25 seconds because the stevia does not dissolve readily. Don't forget to let it cool a bit)

    I also like to toast 1 Tbsp of sesame seeds for the top of the salad. Just toss them in a frying pan and put them on the burner until they are golden brown. I've also toasted raw walnuts and tossed them on top.
    I've had this salad as is or with a can of albacore tuna, canned shrimp, leftover chicken, pork, or beef. Anything seems to be good with it. It has a hint of Asia to it. Hope you enjoy.

    mmmm sounds real good. i've been eating salads for lunch lately. i usually eat it with blue cheese crumbles or feta, romaine lettuce (i don't like spinach), kidney or garbanzo beans, carrots, tomato, fat free croutons. I also eat some with baby corn, olives, and chicken. Or hard boiled eggs and avacado (I don't have all that together, overload!)

    dressing i like fat free raspberry or red-wine vinegrette, lo-fat ranch, or an olive oil and vinegar combo.

    They usally fill me up. But...bad thing is if i'm out at a restarunt or going out to eat, last thing I want to eat is any kind of salad. lol. Especially since I eat it at work.

    1 chicken breast dry fried/sauteed with spices
    1 bunch of Kale, chopped
    Garlic
    Diced carrots
    Diced red onion
    Turkey bacon (2-3 pieces)

    Make the chicken and place on the side to cool down
    Fry up the turkey bacon and when it is done, mix in the rest of the ingredents until the kale is slightly wilted
    Shred up or chop up the chicken breast and add to salad
    You can add low fat low calorie dressing too but the flavor of this salad is enough! its amazing!

    Mine is:
    3-4 New potatoes (boiled and chopped in 1/2) I cook this with chopped chive and mint.
    Cucumber
    Baby Plum Tomatoes
    Pak Choi
    spinach
    spring onion
    and
    Either cooked salmon or shredded chicken

    Dressing is usually a low fat mayo (only a little) and I sometimes throw in fresh basil too.

    I also love our version of a Greek Salad:
    Fresh cut and come again salad leaves
    cucumber
    Tomato (we use homegrown sungold cherry tomatoes in the summer - gives lots of taste and colour)
    Red Onion
    Spring Onion
    Feta
    Black Olives
    Stuffed Pimento green olives
    spinach
    Greek Extra virgin olive oil
    Lemon juice
    and finely chopped garlic clove

    Two hands full of home grown Mesclun salad leaves
    Handful of home grown cut and come again salad leaves
    Half a hand full homemade croutons (home baked bread)

    Dressing
    One fluid ounce Greek olive oil
    One fluid ounce raspberry vinegar
    Teaspoon homemade English mustard
    Black pepper
    Salt

    Diced Lean chicken fried with oil and black pepper.

    Now I want a salad... And I never normally do at home. All my favourite salads have been from this one pub out in the English countryside. The polenta croutons were amazing!

    I grill on the weekend....meats and fruits....but my fave salad ( I have it several times a week) is Mixed baby greens topped with sliced grilled chicken (marinated in coconut milk) and sliced grilled pineapple. YUMMY!!! no dressing needed...

    sliced peeled cucumber (or not peeled)
    beef tomato sliced
    red onion
    black olives
    feta cheese
    olive oil drizzle
    squeeze of lemon
    fresh parsley
    salt and pepper

    mmmmm!!!

    My favourite: Thai salad :o)

    Coleslaw vegetables (shredded cabbage, carrot, onions)
    Shredded chicken breast or prawns (shrimp)
    chopped cucumber
    chopped spring onions (scallions/green onions)
    Fresh mint
    fresh coriander (cilantro)
    Small handful chopped roasted peanuts

    Dressing:
    1/2 chopped red chilli pepper
    1/2 tsp splenda
    1 tbsp white vinegar
    1 tbsp lime juice
    1 tbsp water
    1 tsp sesame oil (optional but yummy)

    Makes a gourmet meal out of a salad!!
