    I'm not really a salad kind of girl, but I had one today that was really good.

    Dark green lettuce
    cucumber
    carrots
    a few slices of chorizo
    15 g (half an ounce, I think?) grated vintage cheddar

    Dressing of olive oil, balsamic vinegar, honey and a little spicy mustard
    I used a LOT of vegetables for this.
  • 2 c lettuce/spinach/whatever greens i have on hand
    1/2 c low sodium black beans
    1/4 c reduced fat mexican blend shredded cheese
    2 tbs cilantro lime jalapeño vinaigrette (http://kneadtocook.com/?p=903)

    i eat this nearly every day & love love love it.

    thank you for posting this dressing recipe!!! I've been looking for a homemade dressing that I would love and love love LOVE cilantro and jalapeno.. trying this tomorrow, thanks!!

    BUMPING FOR IDEAS! I LOVE SALAD.... i usually do spinach leaves, onion, tomatoes, grilled chicken, low sodium salsa and cottage cheese with black pepper on top :smile:

    Garlicky Kale Salad (Whole Foods copy cat from http://www.eatingbirdfood.com/2011/02/garlicky-kale/)

    1/2 bunch raw kale, washed, de-stemmed and dried
    1 T tahini
    1 T apple cider vinegar (or water)
    1 T lemon juice
    1 T Bragg’s liquid aminos (or soy sauce
    2 T nutritional yeast
    1 tsp. minced garlic (1 – 2 cloves of garlic)
    Sesame seeds (garnish)

    I eat the same salad for lunch every day too!

    3 cups mixed lettuce/spinach
    cucumber
    apple
    1 hard-boiled egg
    1/2 can of tuna
    raspberries or blueberries (if I can afford them that week!)
    pecans

    fresh squeezed lemon juice and balsamic vinegar for dressing

    Bed of spring mix or prefered lettuce
    2 tbsp Raspberry Vinigarette
    1 tbsp walnuts
    1 tbsp sunflower kernal
    1 tbsp dried cherries or cherry craisins
    1 tbsp dried apple

    Romaine lettuce and a handful of organic spring mix
    beets
    shredded cheddar cheese
    bell peppers
    mushrooms
    grilled chicken
    bolthouse yogurt ranch dressing
  • 2 cups baby spinach
    1 tbsp honey dijon dressing
    1 large boiled egg
    3 croutons

    I eat this most days for lunch and it fills me up if I have this and an apple on the side.

  • 2-3 cups baby spinach
    4-6 chopped strawberries
    craisins, walnuts
    2 tlbs crumbled bleu cheese or feta
    some kind of vinaigrette dressing (I even do oil and vinegar mixtures!)

    I will add chicken to it if I am making it my dinner (with a light lunch) or my lunch (little a light or snack dinner)

    It is really delicious, I love strawberries and spinach!!

    preferred lettuce (i like spring mix)
    light goat cheese
    1/2 tbs of sunflower seeds (shelled)
    1 tbs of craisins
    2 tbs of light balsamic vinaigrette

    can adjust amount of toppings to your liking!

    Chopped romaine, grape tomatoes, Japanese cucumber, a couple ounces of chicken breast, some avacado, a few sliced grapes and a couple slices of a nectarine, and either some Red Shell Miso dressing or I make some dressing (with rice vinegar+a tiny bit of mayo+a little bit of sesame oil+a splash of tempura dipping sauce...whip them together) A tablespoon or so of either dressing works. Just enough to give a splash of enhancement to the other flavors of the salad.

    Such yummy recipes! I love salads, so I'm looking forward to trying many of these. My favorite includes:

    mixed baby spinach and spring mix
    tomatoes
    cucumbers
    radishes
    mixed nuts
    dried cranberries
    sliced strawberries
    feta cheese (or goat cheese)
    pumpkin seeds
    lite raspberry vinagarette dressing

    Mixed baby greens, plus:
    cucumber & tomato
    sliced beets (roasted in olive oil & rosemary)
    sliced strawberries
    smidgeon of onion
    pine nuts
    goat cheese
    aged balsamic vinegar

    My salad varies by what I have in my fridge but I lOVE LOVE LOVE the Kraft Sizzling Salads dressing kits!
