In my crock pot today is 2.5 lbs chicken tenders, one can of pineapple chunks in juice, and about 1/4 cup of bbq sauce.
Will have this for dinner tonight- either in wraps or over rice, depending on which one I want :)

So many great ideas on here. I've been wanting to do more with my crock pot so I'm definitely giving some of these a try.

Here is a favorite of ours:

    Slow Cooker Chicken Stroganoff

    Ingredients
    • 4 skinless, boneless chicken breast halves - cubed
    • 1/8 cup margarine
    • 1 (0.7 ounce) package dry Italian-style salad dressing mix
    • 1 (8 ounce) package 1/3 fat cream cheese
    • 1 (10.75 ounce) can condensed cream of chicken soup, 98% fat free and low sodium

    Directions
    1. Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours.
    2. Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm.

We also add mushrooms (sliced or quartered) during the last 1/2 hour.

Bumping for later. btw- i love crock pot cooking but it seems like there is always a ton of fat in it after cooking esp with pork. am i buying the wrong meats? I bought a pork butt roast last week for pulled pork. When i came home there was a ton of yucky fat all over in the meat and juice.

What is the best cut for roast or pulled pork sandwiches.

    Thanks!

    i use pork tenderloin.....

My favorite pork loin recipe. Super easy and SUPER yummy--- tested and approved by myself, 5 kids and the hubby :)

    Ingredients
    1 pork loin (2-3 pounds)
    24-ounce jar unsweetened applesauce
3/4 cup brown sugar (1/2 cup if using sweetened applesauce)
    1 Tablespoon cinnamon

    Directions
Put the pork loin in the bottom of the crock pot. Top with applesauce, brown sugar, and sprinkle with cinnamon. Cook on low setting for 6-8 hours.

    Prep Time: 10 Min
    Cook Time: 8 Hr
Total Time: 8 Hr 10 Min
    Servings: 8

    * I find 6 hours is long enough in my crockpot or it could get kind of dry.
*we serve with brown rice and usually broccoli
*the sauce it makes is great on the rice too
    * I measure our meat so a family of 7 with 4oz of meat a person(28 oz of pork loin) it equals out to 297 calories per person and only 447 with rice.
