I love to put cilantro, cubed avocado, fresh lime and hot sauce on my ramen noodles!0

Cut an avocado in half.
Remove the pit.
Leave the skin on.
Sprinkle your favorite salt/seasoning over the avocado.
Fill the pit hole with feta cheese.
Drizzle over with extra virgin olive oil.
Sprinkle with crumbled bacon or real bacon bits.
Dig in with a spoon and welcome to heaven.

I love to mash up an avocado and use it instead of mayo on my turkey sandwich!! YUMMO!0

Alton Brown's guacamole recipe is hands-down the best...Use it as a spread on sandwiches, with pita chips, dip other veggies in it, eat it with a spoon...ok, maybe not the last one ;P
3 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon cayenne
1/2 medium onion, diced
2 Roma tomatoes, seeded and diced
1 tablespoon chopped cilantro
1 clove garlic, minced
I never use the cilantro, but I make this at least once a month. They are high in calories but certainly not empty ones, so I just make room for it.0 -

Spread half an avocado on a whole wheat pita and top with grilled portabellos, onion, peppers, diced tomatos, romaine lettuce and season with cumin, oregano and chili powder.... so delicious.0

I have got to save this because I have some beautiful spaghetti squash coming up and I want to use some avocado with it! YUM the avocado.

In place of a baked potato. Half it, pit it, poke it with a fork. sprinkle lime juice over it, fill the pit hole with salsa or any type of cheese. broil for about 5 minutes. add a tablespoon of plain greek yogurt and some bacon pieces and eat right out of the shell. Seriously the best thing ever!
Also avocado chicken parmesan. Boneless skinless chicken breast coated with panko. bake until crispy at 400. add a tablespoon or so of your favorite pasta sauce, top with sliced avocado and shredded cheese. bake until cheese is melted. No need for pasta, serve with a salad. So yummy!0 -
One of my favorite simple ways to use avocado is a smash chickpea and avocado sandwich. It's easy and refreshing. I actually brought one to the beach with me yesterday and it was perfection.
1/2 avocado
1/3-1/2c chickpeas
lime juice
cilantro
chili powder
Smash and mix the chickpeas and avocado together. Mix in lime juice, cilantro, and chili powder. Eat on some nice, toasted, whole wheat bread.0 -
I like to have just slices of avocadoes but I don't usually want to eat the whole avocado at once....my problem is keeping it to stay fresh...it turns brown really quickly for me. I've tried to leave the pit in the other half...I heard that helps it. Anyone like to share their suggestions??
Try brushing it with lemon or lime juice. The acidity helps to stop the browning. This also works for apples, bananas, etc.0 -

Okay...not the healthiest, but soooo goood for things such as sports parties
Avocado Ranch Dip
-2 medium avocados
-16 oz FF sour cream
-dry ranch mix
-jalapenos (optional, but if you do, go fresh!)
-salt and pepper
-1 lemon
Mix it all together and serve it with veggies, chips, pita bread, anything your heart desires!
P.S. Leave the pit in the mix, this alongside with the lemon juice helps keep it fresh0 -
