    So I did something totally different and had no idea how this would turn out, but it turned out awesome and yummy.

    Costco Wild Alaskan Salmon (NOT Atlantic, it has toxins, people).... with blended tangerines drizzled over it.... Oh. Mah. Gaw.... is it good! Cooked for 20 min in a toaster oven at 400..... nom nom.... who would have known that combo was yummy???

    So, did you puree the tangerines? That combo sounds amazing to me. I use orange with lots of recipes, never thought of using tangerines. I wonder how it would pair with fresh grated ginger?

    Honestly, I am a thrifty shopper and saw the cans of Dole tangerines on sale months ago, so I had about 10 cans in my pantry. I typically will put a 1/2 cup of tangerines over my oatmeal in the morning... but I was bored with oatmeal yesterday so didn't eat them. I literally just threw the remaining 1 C of tangerines in the blender, added one spoonful of agave (not that it needed to be sweeter, I just love agave!) .... and that was it! I put a dab of olive oil on the salmon so it would not burn, and then a spoonful of the tangerine juice over it while it cooked so it would seep in a bit. Then when it was done, I separated the salmon with my fork as you can see in the pic, and just put two more spoonfuls of the tangerine juice on top of it. Easy easy.... and I had NO idea it would have ended up tasting as awesome as it did! :)

    I'm not a fan of ginger, but I know I need to LEARN to be a fan of ginger. Not sure what to tell you there! :)

    You are my kind of gal. I shop like that as well. I am a big big believer in bulk shopping to save money in the long run. I am going to try that next time I fix salmon at home. Hubby is not a fan of it so I typically make tuna at home and order salmon when I go out.

    I have some type of auto immune disease (in the middle of testing to see exactly what) and I am finding that foods that are supposed to lower inflammation, like ginger, do help a great deal. Trying to find ways to incorporate it into my diet.
