    Had slow cooked Turkey legs the other night with sage and raisins, a side of chopped brussel sprouts with onion and Walnuts. yummmm cant wait to try your Brine solution on both!!!!!

    K... I think I figured out the mystery of posting pics on here!

    Here's tonight's "Food Porn"... anyone want to guess what it is??? It was amazing, just so you know....

    K - finally found my original post w/picture - here's the recipe! :)

    2 yellow squash - sliced into 1/2 inch "rounds"

    Baking Pyrex: drizzle light virgin olive oil and spread with a napkin, then coat Pyrex lightly with garlic salt

    Topping:

    2 Cups of whole roasted salted cashews
    2 Cups of purified water

    Blend in blender until it looks like "milk"... then add:
    1/3C dried onions
    1/3C Italian seasoning
    2Tbsp Tumeric (<-- anti-Alzheimer's, folks)
    1 5.5oz can of V8
    2Tbsp garlic powder
    1tsp rosemary (fresh from my rosemary plant!)

    Blend in blender....

    Put on top of squash.... bake for 20 min at 400 degrees....

    HEALTHY!!! And, you will have enough "topping" left over to freeze. Two tablespoons of the topping is 115 cal, 8.6 carbs & 5 grams of protein. I've also used the topping on eggplant and it was amazing!

    Hey there girl. Ya know, I have tried a few recipes and have not found one I like yet. I do not really know about the low carb thing as most have oats or something like that in them. A good high protein, low carb, before or after work out snack for me has been a can of tuna.

    Here's another for y'all.... I just made this up as I went along but it was DELICIOUS!!! :happy:

    Recipe:
    1 Portabello mushroom cap
    1/4 yellow onion
    2 T Extra Virgin Olive Oil
    2 T frozen spinach
    1 5.5oz can of V8
    2 T Italian seasoning
    Dash of garlic salt

    Add about a cup of water to a frying pan and add in the olive oil. Then once the water is bubbling/almost to a boil, add the mushroom. Chop up the 1/4 onion and make sure it is simmering in the oil/water to sautee. Then add in spinach, V8 and seasonings. I cooked it on low until the V8 was reduced and not runny.

    Put the cap onto a plate and put the sauteed yumminess over it... and voila! Oh, and I also added some Tumeric to the top of it because it's good for ya!

    Fat 28 (all from olive oil)

    THANKS! Love it. I have recently been finding out that tumeric is good for you, as well as one of the foods they say fight breast cancer.

    And it has been my experience that making it up as I go along are some of the best recipes.

    Here's a very interesting article on Tumeric..... gotta admit.... if the statistics are there and that's a staple item in their diet, doesn't take a rocket scientist to do the math... lol.... :)

    More food porn... this was super easy....

    I bought some "free range/organic chicken thighs" recently at the store.... and boiled them ALL at once in the same mix of BBQ sauce & balsalmic vinegar - then froze them again for use whenever I wanted. It's become one of my staple "go-to's" for protein.

    So I defrosted a piece, cut it up (for breakfast!) and put a tablespoon of light Agave drizzled on it....

    Nom nom and super quick/easy......

    (I was getting SICK of oatmeal....)

    Totals: 214 calories, 16 Carbs, 7 grams of fat, 31 grams of protein & that's it! :)

    I am big on the idea of batch cooking as well as precooking meat before it goes in the freezer. I posted on my page this tip for people in the path of the storm so if their power goes out, they will not lose food because it is already cooked and can be eaten.

    I hear ya about getting sick of oatmeal, I am with you there too, and I will scream if I have to eat another eggwhite omelet. I over dosed on those when I discovered the egg whites in cartons at Costco.
