    K... I think I figured out the mystery of posting pics on here!

    Here's tonight's "Food Porn"... anyone want to guess what it is??? It was amazing, just so you know....

    K - finally found my original post w/picture - here's the recipe! :)

    2 yellow squash - sliced into 1/2 inch "rounds"

    Baking Pyrex: drizzle light virgin olive oil and spread with a napkin, then coat Pyrex lightly with garlic salt

    Topping:

    2 Cups of whole roasted salted cashews
    2 Cups of purified water

    Blend in blender until it looks like "milk"... then add:
    1/3C dried onions
    1/3C Italian seasoning
    2Tbsp Tumeric (<-- anti-Alzheimer's, folks)
    1 5.5oz can of V8
    2Tbsp garlic powder
    1tsp rosemary (fresh from my rosemary plant!)

    Blend in blender....

    Put on top of squash.... bake for 20 min at 400 degrees....

    HEALTHY!!! And, you will have enough "topping" left over to freeze. Two tablespoons of the topping is 115 cal, 8.6 carbs & 5 grams of protein. I've also used the topping on eggplant and it was amazing!

    Thanks so much! These would be great healthy finger foods for something like a superbowl party. Every one is always trying to figure out what to make that tastes good that is healthy as well.

    Thanks! It is really good! I am getting lots and lots of good feedback on my guac recipe. I am going to make some this week, chances are I will stand over the bowl with a bag of chips and eat half of it.

    The tofu lasagna and the "junk food" post caugh my attention. I think next Sunday at least the lasagna will be on the menu. I'm always looking for meals that can last me through the week.

    Please let me know how you like it. It freezes well too. Do not forget that you can add anything you want to the tofu mixture to flavor it. I like to mix it together and then let it sit in the frig for a few hours, it helps the tofu take on the other flavors.

    Dont forget to brine! That is the most important thing to do with pork, just make sure it is not too strong. And do not worry, the meat will turn a little white. Let me know how it goes, it was really good.

    I do turkey legs the same way, brine them then grill or (gasp) we deep fry them. It is supposed to be healthier to deep fry them as the fat is seared and does not seep into the rest of the meat.

    The jerk sauce is amazing, you can order it on line, its worth the $, it lasts a long time.

    This is not just for pictures of food, but recipes and ideas as well. But I do like that thread, just wish I could figure out what I am doing wrong trying to post pics on there from my page.

    Had slow cooked Turkey legs the other night with sage and raisins, a side of chopped brussel sprouts with onion and Walnuts. yummmm cant wait to try your Brine solution on both!!!!!
