    Clean Eating Slow Cooker Spinach And Chicken
    (Makes approximately 4 quarts)

    Ingredients
    4 large chicken breasts
    1 lb. frozen spinach
    1 (28 oz.) can diced tomatoes
    1 (18 oz.) jar clean marinara

    Directions

    Step 1 – Place all ingredients in a 5 quart crock pot and cook on low for 6-8 hours. It’s done when the chicken easily falls apart.

    Note: Times will vary based on your crock pot. All crock pots cook differently.

    Eat and Enjoy!

    I'm currently making homemade cinnamon sugar almonds. Horrible for you, but LOVE them, and its fitting for fall <3 Smells delicious too :)

    Apple Pie Apples:

    4-5 Whole Apples
    1/2 CSplenda Brown Sugar
    1/2 C Chopped Peanuts
    1 tspn. Cinnamon
    2-3 Cups Apple Juice

    Topping:

    Lowfat Whipped Cream - Or - Sugar Free Caramel syrup


    Mix your brown sugar, cinnamon and peanuts together. You can even add cooked oatmeal to this mixture for more nutrition and grains. Once you have cored your apples, fill each apple with a spoon full or two of this mixture

    When you core each apple, be careful not to core all the way thru the apple, as you want to make a "pit" that you can put the mixture into and have it bake right inside the apple.

    Pour your apple juice into the crockpot, put apples right side up and let them cook on low for 2-3 hours

    Once you have pulled them out of the crockpot, the apple will be soft with the skin of the apple still "holding" the apple in its original shape. You can then top your warm apple with the whipped topping or carmel.......DELICOUS and tastes just like apple crisp!

    I love crockpot recipes!

    Recipe: Pork and Apple Curry

    Makes 4 servings
    Preparation Time: 15 minutes

    Ingredients:

    · 2 pounds boneless pork loin roast, cut into 1-inch cubes
    · 1 medium tart apple, peeled and chopped
    · 1 small onion, chopped
    · 1/2 cup orange juice
    · 1 tablespoon curry powder
    · 1 teaspoon chicken bouillon granules
    · 1 garlic clove, minced
    · 1/2 teaspoon salt
    · 1/2 teaspoon ground ginger
    · 1/4 teaspoon ground cinnamon
    · 2 tablespoons cornstarch
    · 2 tablespoons cold water
    · Hot cooked rice (Optional)
    · 1/4 cup raisins

    Directions:

    In a 3-qt. slow cooker, combine the first 10 ingredients. Cover and cook on low for 5-6 hours or until meat is tender. Increase heat to high. In a small bowl, combine cornstarch and water until smooth; stir into slow cooker. Cover and cook for 30 minutes or until thickened, stirring once.

    Serve over rice if desired. Sprinkle with raisins.

    My favorite is carnets - cut a pork shoulder (Boston butt) into 1 cubes, toss with oregano, salt, pepper & cumin. Put in crock pot, add 1 onion (quartered) and 2 garlic cloves (whole) on top of the meat. Cook low for 6 hours, use slotted spoon to remove meat. Toss the onions & juice, no matter how yummy it looks (it isn't!!). Hand shred the pork and put in salad, tortilla, whatever. Yummy!

    THANK YOU EVERYONE for the previous recipes. Trying to be a better meal planner, so this is awesome!

    As a previous poster suggested, I do something similar.

    Bag of frozen chicken breasts (I used good ol Walmart-NOT precooked)
    1 can of Rotel
    1 package of taco seasoning.
    Do NOT add additional liquid.
    Threw it all together in the morning before work, came home and had dinner for our family AND company. Great for tacos/taco salad/ect. and 8yr old approved.

    Made this tonight, except I added corn.
    Delicious...if a bit spicy for my tastes. My kids loved it (as did the cats who licked the juices).
    Need to find a way to make it less watery though. I think it came from the frozen chicken breasts.
