Corned beed with horseradish cream, pumpkin and beans and peas stir-fried with black garlic.

I visited a friend over the weekend, when I asked her if I could bring something she said "Ohh, one of the slices you are so famous for." I don't know if she had me confused with someone else, but I have never been famous for my baking. Rather than an awkward conversation, I made a slice. Peanut/almond butter with oatmeal as the base, caramel centre and a chocolate topping.

Bought some paleo bread. Scrambled 1 egg white with a little grass fed 2% milk, 1 tsp vanilla bean, 1 tsp cinnamon, 1 tsp honey

Dipped the bread in and cooked it in unsalted GF butter, and finished it by broiling it on Lo in the oven Topped with drizzled unfiltered honey and organic black cherry preserves.

umm.... I put a 'glug' of olive oil in a bowl (say a tablespoon full?), with a generous pinch of sea salt, and whatever herbs/spices I feel like (usually fennel seeds, or chilli flakes or paprika), and then I put my pumpkin and potatoes (for the boys) in the bowl, cover it with a plate and jiggle it about until everything is evenly coated.

Then I tip it out to a baking tray lined with baking paper (so there is nothing to wash-up!), and whack it in the oven at approx 200C for 45ish minutes, depending on how big the pumpkin bits are.

    Done. Easy.

Inspired by a Dahllywood image of chicken and sweet potato, I decided to make this tonight:

    I4Ccqis.jpg

BBQ Chicken, asparagus, tomato with half a sweet potato and a small regular jacket potato, both filled with extra light cream cheese with chives, some chedder and jalepenos.

Next time I'll be using cottage cheese as a filling and only a sweet potato.

Welcome!
