    Let me see how much I can remember:

    This makes 2 quite large meals of about 650 cals (and 50 grams protein!) each, and can easily be made lighter by halving the butter and oil or dividing it into 3 or 4 smaller meals.

    Scampi:
    1 lb shrimp
    2 T butter
    1/2 cup white wine or wine vinegar (I used a pinot grigio vinegar)
    1/2 cup broth
    lots of minced garlic
    pinch of salt and pepper

    Spaghetti:
    2 servings spaghetti (I used Barilla whole grain thin)
    1 can fire-roasted tomatoes with garlic (I usually use fresh tomatoes, but I was in a hurry)
    4 servings feta cheese (I don't recall how much a serving is, I just measured out 4 of them)
    minced garlic (I didn't measure...a spoonful)
    1 T olive oil
    small handful of fresh basil, chopped (store was out, so I used dried herbes de' provence this time)

    So...put the butter in a medium skillet until it melts, throw in the shrimp and cook until just starting to curl and pink, throw in the garlic for a minute, then put in the rest. Cook until the shrimp are done and remove the shrimp, crank up the heat and reduce until the liquid is halved, and pour that back over the shrimp.

    Cook your noodles and drain, add the other stuff and throw the shrimp on top.

    The whole thing takes about 10-15 minutes if you can multi-task.

    I get catered meals so I don't cook but here's tonights dinner! Macaroni cheese with salad and ketchup, and a chocolate cake with icing. Not sure about the nutritional value but I'm guessing 750kcal for the whole meal.

    I put yellow curry powder in my ground turkey, delicious! I prefer roasted turkey, but I only have whole chickens left in the freezer and wanted to get through the turkey first!


    I find I go through phases with both yam and squash. I need to remember to not over do it while I am in my "this is amazingly delicious phase" and then I won't be so grossed out by them come two or three months.

    Never put ketchup on your mac and cheese? Oh man, ketchup all over kraft dinner was such a treat when I was a kid haha.

    I'm like that too. I get stuck on something until I can't stand anymore (it's pumpkin right now). Can't stand curry either. Ha!

    Dinner - I made spaghetti and tossed it with a little olive oil, garlic, pecorino, asparagus, Mrs. Dash Fiesta Lime seasoning and a few turkey meatballs; salad of mixed greens, mixed sprouts, portobello mushroom, cherry tomatoes, asparagus, cucumber and pecorino cheese.

    Dessert tonight, I made a cup of hot cocoa and froze it, then blended it with half a banana, vanilla almond milk and whipped cream. Super yummy!
