Yummy snack.
Smoked chicken, herbed potatoes and glazed carrots.
Lunch at Russel's Cafe: pork, Brie and apricot panini with farmers salad.
Dessert! Chocolate cake with salted caramel cream filling, pound cake with peanut butter frosting, and chocolate chip gooey butter cake.

Not sure why it's flagged. It's a Love Reese's to Pieces donut from Tim Horton's. It won a Dueling Donuts contest last year. Chocolate donut with creme brulee filling, chocolate frosting, chopped peanuts and mini Reese's peanut butter cups0 -
Chickpea and veggie curry with konjac rice. Can't say I was too keen on the rice, the texture was too idk... squidgy... for me. I think I'll just have the leftovers tomorrow on a bed of spinach.

Lunch of leftover plumped raisin mujadara with yoghurt, fresh veggies, baguette, plum
Panzanella-inspired salad of mixed greens, roasted tomatoes, leftover bread cubes, roasted cherry tomatoes, grilled zucchini and grilled apple-sage vegan sausage, with dressing of roasted tomatoes blended with light mayo, garlic powder, and fresh thyme

Homemade ginger-soy black bean burger over baby spinach +pickled red onion salad with some A1 steak sauce (didja know it's vegan?) and a fried egg, with plum. Going to make this burger again as "meatballs" for a potluck this weekend for sure, maybe with some Thai basil added...hmm...

My last two nights dinner. Sunday night was sweet chilli chicken kebab, mixed rice and grains and oven roasted peppers and courgette. Tonight was half a pizza express sloppy guiseppe with wedges and rocket. Both delicious!
Having a week if eating out of the freezer/cupboard so I don't think the rest of the week will be as good.

Friday dinner was shrimps and calamari grilles on bbq then tossed in vodka tomato sauce with portobello mushrooms served with a nice garden first zucchini... noodles Need I say how good this was?? lol ]
I've been obsessed with zucchini (and vegetable) noodles since I first bought my spiralizer 3 years ago. It's so good!0 -

Here’s the ginger-soy black bean burger recipe, @allykat910. Makes one large burger, scales easily to make more.
1 cup black beans, drained and rinsed
1-2 stalks green onion, diced
1 Tb soy sauce
1/2 tsp ground ginger
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp black pepper
In a large mixing bowl, place the black beans, onion, beans, and soy sauce. Mash with a fork or potato masher until smooth enough to bind but retaining some texture. Stir in the seasoning and taste. Add more of anything as desired, shape into patty, and cook over medium heat on an oiled skillet on each side until lightly golden, flipping (carefully! It's delicate) once.0 -
Tired two new foods for me, Avocado and quinoa. I made Quinoa with spinach, Cilantro-Lime Chicken with Avocado Salsa and some farm fresh green and yellow beans, OMGosh so good.0 -
