    Zucchini creamed with smoky paprika then topped with crispy proscuitto and a poached egg.

    A very filling and NOMMY dinner!

    Peel, quarter, and remove seeds from a giant mutant garden zucchini. Add some shredded onion to your taste. I like lots of onion.. Throw in a pot and just cover with water. Simmer until creamy colored and soft. Drain (save the liquid). Add lots of paprika (I like smoked) and salt and pepper to taste. Next add sour cream and heat through. It should be soft but not runny. Of it's too thick add some of the reserved liquid. Too runny add more sour cream.

    I am full blooded Hungarian and my mother made this OFTEN in the summer time!

    Do you add vinegar to the water when you poach your eggs? That made all the difference for me.

    Thanks, that sounds delicious! I'll try it the next time I grow a giant mutant zucchini :wink: And, no, I don't think I used vinegar. I'll have to try that as well.

    You all sure have pretty looking meals! Mine never look that perfect!

    Tonight I made spaghetti with turkey meatballs and sautéed spinach, mushrooms, green onion, garlic and basil. Side of asparagus.
