After X'mas is ... leftovers, LOL! Roasted veggies with bread, paneer which was later transformed into bread soup with chestnuts, carrots and leftover roast duck. Dessert was jeju mandarins ... simple but yummy.

Wanna start 2016 right so having sweet stuff at the strike of midnight!!! Xmas cake, butter cookie, dried grapes made by my colleague's wife and jeju mandarin! Happy New Year all and may 2016 be as full of sweet & delicious things!

Tonight's supper. Crockpot chicken thighs over rice, with steamed broccoli and carrots and some Greek salad. About 550 calories.

Today was a day of leftovers. Lunch was leftover sushi soup, dinner was roasted honey glazed halibut bread pudding made from leftover roast veggies and bread and leftover marinate from honey glazed ribs dinner from last night.

I forgot the dessert - petite Xmas fruit cake layered with cream cheese, topped with melted After Eight mint with jeju mandarin. And a hazelnut mocha.

Veggie Tacos
Calories ~ 360
2 corn tortillas
1 oz Tillamook Cheddar
1 Tablespoon Sour Cream
1/2 Cup of Black Eyed Peas (or substitute pintos)
1/2 Cup Chopped Kale (or substitute lettuce)
1 Tbsp chopped onion
1 lime wedge juiced
1 tsp chili powder (I use 1/2 cayenne and 1/2 chipotle)

One of my favorite breakfasts. Loaded veggie scramble with turmeric, turkey bacon although I prefer Applegate brand, sprouted grain bread and a berry smoothie with almond milk.

Had a horrid start to the day with furniture suddenly falling apart and fave bowl cracking ... so I needed comfort foods. Steak & eggs for brekkie - medium rare wagyu steak with fried egg and sauteed carrots, onions and mushrooms in the seared meat jus, balsamic vinegar, dijon mustard and worcestershire sauce. Then I had to go out & get new furniture and it was so traumatic I needed an elderberry cider with truffle chips.
