Time for some food pictures!
Spatchcocked chicken barbecued with love.
The full plate, with cheddar rice and waxed beans.
Buffalo chicken baked taquitos with homegrown veggies salad and some ranch dressing.
Gratinéed zucchini stuffed with italian sausage and tomato sauce, buttered pasta, salad.
Caramelized parsnip purée with bacon, duck magret sauce grand veneur with blueberries. With a glass of my favorite Bourgogne red wine, Chanson Givry. Not a great picture, but a fantastic meal.
Arroz con polo.
Chipotle and honey grilled salmon, buttered quinoa, organic nachos with avocado-corn-mango salsa.

Weekend grillin' time coming up... 8 oz steak, bacon wrapped sweet onion, mixed greens salad.

Had a cup of homemade chicken/noodle/veggie soup (chicken, carrots, brussel sprouts, onions, garlic, new potatoes, fresh corn cut off the cob, raisins, noodles) . I have a cold and I always crave this stuff when I'm sick.

Well, I had planned to make corn cakes, but it devolved into ramped up scrambled eggs. Yummy though. Consisted of polenta, eggs, turkey, onion, garlic, corn, parm cheese and spinach. Sides of fresh tomato, cucumber, and corn.

Dinner tonight was a Rotisserie turkey sandwich on toasted sprouted grain bread with tomato, onion, mushroom, romaine lettuce, mustard, and provolone cheese. Side of red bell pepper, cucumber and watermelon.

Grilled chicken breast over mixed greens with wonton strips, craisins, goat cheese crumbles and balsamic vinagrette.

Dinner. Yellow squash fritters and a sliced tomato!
Those look great can you share the recipe please!!
It was thrown together, but here's how I made it.
1 medium yellow squash - peeled, shredded, salted
2 eggs
Dried Chives
Dried Parsley
Black Pepper
Pinch of salt
tossed it all together and added enough bread crumbs (unseasoned) to hold it together. By hold it together I mean when I used a spoon to scoop some out it held it's shaped once I squeezed it against the side of the bowl to pack it into a ball on the spoon.
Then I dropped it into a pan, spreading it out just a little to make a patty in just enough olive oil to come 1/2 way up the side of the patty.
It made about twice the amount on my plate.
I'll be trying it again tonight on a patty pan squash I have. This time I might add some shredded cheese for some extra yum... we'll see.0 -
