Bulk meal prep of muffin tin ham/spinach/mushroom quiches with basmati rice. I portioned everything into 12 containers, which averaged out to 325 calories per meal (though that count is not perfect per container).

Smoked ham, butterkin squash (butternut pumpkin hybrid), red onion, spinach, garlic, and mushrooms braised in ham broth and tossed with crème fraîche, gruyère, penne, sage, and parsley.

Today's breakfast was oatmeal with peanut butter and bananas. I mixed it all together and it was yummy and filling

My lunch the last two days were out with friends and colleagues - nasi padang and chicken chop hor fun, so tonight I thought I would have a simple dinner of bread, rillettes, asparagus & green apples.

Working like a dog so dinner was a simple pot of kimchi tossed with asparagus, halibut and two soft boiled eggs. Dessert was deep fried banana fritters with melted After Eights and some strawberry cheesecake and New York Fudge Crunch ice cream ... and my usual cardamon tea.

Not a meal per se, but for me, pickled veggies make an awesome snack. Need to make some more pickled onions too.
