Beautiful and scrumptious meals from a recent trip to Mexico - fine dining and street cafes. Everything was so light, fresh, and non-greasy. YUM!

The meat dishes are goose hotpot and plum sauce spareribs. Dishes in the pictures before those are 1) eggplant, scallop and tofu hotpot and 2) crispy tofu topped with pork. The crispy tofu was like agedashi tofu Also pictured are the egg white and scallop fried rice and mini mango pudding jars topped with evaporated milk.0 -

Tempura broccoli as a play on beef and broccoli. topped with a kung pao mayo
last one is a roasted garlic sope, albondiga, refried beans, salsa chipotle and queso fresco

So when potato and onion pierogi are requested and you decide to make them from scratch but are too tired to spend all that time cutting, stuffing, and crimping what to you do? You roll the dough into sheets and make the ingredients into one big giant pierogi lasgana! Whee! And don't be fooled by the color on top, there is no tomato sauce, that's just a bit of bacon that was sprinkled on top at the last minute.
