Air fried wings with Vietnamese caramel/fish sauce. Thai pomelo salad. Plain sticky rice.

Was recently gifted David Thompson’s authorative cookbook “thai food”. His som tam with crispy sweet pork and plain sticky rice. Substituted spiralized carrot and Granny Smith apples for green papaya. Air fried the meat instead of deep frying.

Home again after a week in Ontario and a variety of divergent eating. Grilled BBQ and plain chicken, grilled foil-packet savory green beans, fresh carrot/raisin salad (greek yogurt, not mayo), tom/cuke salad with optional green peppers. Phone cam isn't the best.

Hubby's turn to cook. Meatballs in peanut satay sauce, Indonesian sauteed green beans, Indonesian cucumber salad, plain rice.

Busy day today. Made quick dinner of curried salmon/veggie salad open-faced sandwiches, with side of carrot-raisin salad from yesterday. No mayo in these salads - greek yogurt instead.

On the last dregs of my crockpot shredded chicken. Also needed to eat up an inordinate number of carbs. The stuff mixed into the avocado is Don Emilio hot salsa mache de chile morita. Since finding this, my life has been changed.

Tried out sweet habit last night in part of my refeed. Ate the whole thing which equals 2 pints. It’s one of the newer low cal ice creams. I did like it, but found it had less flavor than halotop, wasn’t as sweet or as rich in flavor but still good. I doctored it up with strawberries. Blueberries, cereal, and some SF maple syrup! Was still pretty good. Whole 2 pints for a little under 600 cals. Part of my refeed though so wasn’t worried about calories.

Cooling pickles (cukes and red onions) before refrigerating. Should be ready, and delicious, by the weekend and beyond. Hmmm, just love grilling season!

The base of the bowl is full of proteins: shitake & portobello mushrooms; black beans; chili beans; and spicy tofu, then topped with fresh pico de gallo, corn, grated carrot, and I topped it with Spinach and edamame today. This is my version of a Burrito Bowl. Well - it's darn delicious and SUPER filling! This is my Friday afternoon "treat" to end off my working week.
