    So after looking at these photos, I've come to realize that its definitely about portion control for high caloric foods and the nutrient packed meals seem to overflow on plates. I can have the best of both worlds.

    Shaved zucchini and apricot salad with black beans and flat leaf parsley (from our patio garden), tossed in lemon juice & cracked pepper vinaigrette, a bit of Parmesan cheese. With some homemade roasted garlic baba ghanoush & ciabatta roll.

    - cut off the white, fatty part and dice the fat. Reserve the rest of meat which you will divide into as many muffins as you want to make, and layer the bottom of each form.

    - add few cloves of crushed garlic (to taste)

    - sprinkle in salt, pepper and chili flakes to taste (I like spicy to I did about a tablespoon)
    - then add a bag (300g) of fresh spinach and let it cook off for a few minutes
    - take this off heat and let cool.

    Mix couple dozen eggs in a mixing bowl
    - add in couple diced roasted red peppers and stir
    - add the mixture to the onion mixture and stir
    - fill in your muffin forms
    - top with a piece of tomato

    Bake at 350F for around 1h and turn the pan around half way through the bake. Your oven might be different then mine, they are ready when spungy and set.

    Thanks everyone for the Friday dose of food porn. One of these days I am going to start participating in this thread, but I don't think the left over fish tacos I have for lunch are going to be the right foot to start out on. Maybe next time..
