Tostadas with tuna ceviche to start. You can make tostadas in the microwave without any added oil.

Main of tacos filled with leftover beef stew we had in the freezer. Pico de gallo is easy made by blitzing tomato and onion together in the food processor and seasoning with salt. Coriander should go in that but we have ours on the side for the benefit of my coriander hating hubby. Crumbled feta as a substitute for soft cotijo. Store bought quac and some shredded lettuce as well as the leftover ceviche from the starter.
This is a festive easy meal to put together, especially if you use store bought tortillas. I made my own with blue masa harina which is quick work if you knead the dough in the food processor, have a tortilla press and use multiple dry skillets on the range. A cast iron tortilla press is about the same size as a small frying pan, so worth it's space in kitchen storage. I used to flatten tortillas between two cutting boards lined with non stick kitchen paper by standing on them.

Spaghetti with shrimp and pesto plus a bit of rough cut fresh basil. Chopped salad. I was intending to sauté the shrimp and make some quinoa but my partner requested the pasta/pesto combo so I went along with it.

I finally remembered to weigh the finished, cooled loaf I made yesterday so I can accurately track the calories for my homemade bread! I’ve avoided it up until now, but it’s made me realise I can have some in moderation, as part of dinner.

Grilled beef patty, root vegetable fries w/Primal Kitchen garlic aioli mayo as dipping sauce and bacon Caesar salad. I did these fries a while back and over air fried them. This time I got the timing right but I won't buy them again. The carrots ended up being the most like french fries (so perfectly cooked), the parsnip was thinner and borderline too cooked while the beetroot was a bit soggy. I don't think they work well together because of different characteristics in the raw form and it would be better to stick to a single vegetable.

Starter of griddled romaine drizzled with ranch. Main of air fried chicken thighs and roast potatoes, sauteed blanched green beans. The hubby was a big fan of the green beans we had last week on vacation in Paris so I tried cooking them softer (the French way) instead of harder (the Chinese way).

Contrary to my usual way, I bought a pre-made Lasagne. It’s a Vegan product made by a company called ‘Bosh!’. Well respected company for plant based foods in the U.K. 385 cals for the pack. It’s really difficult to make Lasagne for those calories.
It was vile! Reminded me more of a school dinner style Shepherd’s Pie than anything else. I feel seriously cheated! 😂.
My mission now is to make a plant based Lasagne that hits the calories but tastes great! 🤔

Halibut, scallops and brown rice w/rice seasoning, lemongrassm wasabi, sesame seeds and tamari. Halibut isn't a fish I typically buy but Costco was out of Chilean sea bass so we decided to try it. I've had it as sashimi a few times and liked it but cooked it's a little firmer fish than I prefer so I'll be adding some more flavors to it next time.

In whatever order:
Homemade taco salad
Soy-ginger chicken with Chinese-5-spice seasoned green beans and some rice
Baked ‘ziti’ (I used a different shape of pasta lol)
First attempt at homemade sushi. Delicious, but too big. We know to cut the nori in half next time lol
Homemade orange chicken
First try at homemade pretzels. Pretty good, but the bottoms were burned, sadly. I’ll certainly be trying them again soon!7 -
Roasted eggplant parm but in a casserole dish. Lots of indulgent cheesy goodness.3 -
Hubby cooked. Dutch zuurkool stampot (=sauerkraut mash) looked a little strange because the brand of sauerkraut we bought contained quite a lot of grated carrot, which made it taste weirdly sweet too. Lamb chipolatas. Green salad with vinaigrette.

Butternut Squash, Red Onion, Red Pepper with Black and White Chickpeas roasted in a Gochujang glaze. Pearled Spelt, Skyr & Gochujang dressing and a microgreens Salad.

Salad of romaine, cherry tomatoes, kalamata olives and chicken salad. The latter being grilled chicken thigh chopped and mixed with Primal Kitchen chipotle lime mayo and capers. This is the same way I nearly always do my tuna salad so I thought I'd try it with chicken and it worked out nicely.

Spicy chicken bacon wrap from a local place I love. 540 calories with a decent amount of protien and veg.9 -
Grilled sea bream, sauteed green beans with garlic confit, air fryer roast potatoes, leftover pico de gallo, salad leaves with ranch.

I was craving something sweet so I cooked down a couple of apples in butter w some brown sugar/cinnamon/nutmeg and poured it over oatmeal. Delicious!6 -
