Tried some cod w a new seasoning blend: honey butter cinnamon from feast mode, not bad. Paired w green beans stir fry w garlic chili oil.5 -

Air fryer tempura dinner. This was sea bream, aubergine, carrots and cauliflower tempura with rice. I used half self raising flour and half potato starch with cold sparkling water for the batter. To do wet batters in the air fryer, add a tablespoon or two of vegetable oil to the batter, dunk and dry fry on a warm non stick pan just long enough to dry the batter and then set aside. This can be done in advance. When you want to eat heat up everything at 200C in the air fryer for 10 minutes. Not as good as deep fried but pretty close.

All the ingredients for tagliata di manzo were lying around the fridge, so made one for breakfast.

A girlfriend came over and we batch cooked two huge vats of dutch split pea and gammon soup. We had some of that for dinner and put the rest in boxes for our respective freezers. Dessert of pannacotta with some strawberries macerated in balsamic vinegar. Pannacotta was made with whole milk mixed with condensed milk instead of cream.

OVEN FRIED CHICKEN BREAST AND LOW CARB WAFFLES 🤤
Chicken Marinade:
Buttermilk
Smoked paprika
Cayenne
Pepper

Chicken breading:
Ground flax
Ground almonds
Paprika
Onion powder
Garlic powder
Monk fruit sweetener
•
Dippy dip:
2 eggs
•
Waffles:
1 cup Super fine Almond flour
4 Eggs
4 oz cream cheese
2 tbsp melted butter or coconut oil
2 tsp baking powder
2 tsp vanilla extract
(All ingredients zipped in blender)
If you want sweet batter, add 2 tbsp of sweetener of your choice.

Dip chicken in breading mix, dip in egg, and dippy dip breading mix second time. Place on rack on pan. Spritz chicken with avocado oil spray and into the oven at 425° for 10 minutes, flippy flip and 7 minutes.
Spritz waffle maker with spray oil, pour batter, and cooked waffles. I cooked mine for 2 minutes.
Drizzle sugar free syrup on the sucker. *Mic drop*

Was planning to serve leftovers of duck gyoza I made last weekend and parked in the freezer with some asian cucumber salad with black sesame as a starter followed by the leftover part prepped air fryer fish and veg tempura dinner. We were full after the starter so will save the tempura for tomorrow.

I started a 16:8 intermittent fasting cycle a few days ago so I'm eating all my calories between 11 am and 7 pm. Here's what I had today:
Bento style lunch with sausage, cantaloupe, Muenster cheese, crackers and a mini strawberry donut.
Carb balance tortilla with smoked chicken, peppers and onions and a side of ripe tomatoes with fancy salt blend.
Not pictured: iced coffee and two chocolate chip cookies for an afternoon snack.
It was a good day!

Weekday dinner with protein pulled out of the freezer. Sous vide smoked brisket finished for 10 minutes in the air fryer, mash, salad, sauteed peas and sugar snaps.

Dinner at the new Chinese around the corner. Always weirded out when the hubby wants to order fried rice at a restaurant, because for a Chinese person that's something you make with leftovers. We also had cumin lamb and the veggie stir fry.

Got a burrito bowl from Pancheros earlier this week, for the first time in a while. So good!4 -
Been wanting to make this for a while. I should have done it a few weeks ago when it was still really cold. Thinly sliced beef in a miso type soup w udon noodles. Good stuff! Resisted the urge to make it really spicy lol.6 -

I read a recipe last weekend for Taiwanese butter fried rice with thinly sliced steak and a cured egg yolk that was a signature dish of restaurant BAO. Had an Ottolenghi moment, where I thought "sounds delish but way too much work, shall eat it at the restaurant". So we had dinner at BAO tonight. Everything was delicious, even the kale salad, and I normally hate kale.

A girlfriend who visited on the weekend donated a couple of servings of batch cooked mushroom risotto that we ate last night as a primo. Secondo of tagliatta di manzo.

I stayed late in the office so dinner was basic. I would have normally added an asian cucumber salad to this menu if I wasn't in a hurry to get dinner on the table. Rice and beef stir fry with snow peas in black bean sauce.

I took the opportunity to make stuff I like but the hubby doesn't because he was having dinner elsewhere. Air fryer wings, microwave potato, rocket salad.

Simple stir fry with broccoli, snap peas, cauliflower, bok choy, coconut aminos and chicken tenderloins. I need more purple cabbage in my life .. ☺️

Starter of Turkish salad of watermelon, feta, mint, pomegranate molasses and black pepper. Main of pan fried sea bream, lentils cooked in broth, and a sort of chimmichurri made out of leftover celery leaves from last weekend's batch cook of dutch split pea soup.

Cajun sea bass and egg fried- riced veggies & cauliflower. I like to call it veggie fluff. ☺️
