I love stir fries - easy, quick and delicious. This one is tempeh, collards and carrots tossed in a tablespoon of General Tso's sauce over cooked pearled barley.

I finally took a photo of a completed cauliflower pizza (with toppings). I have to say, this is my new favourite pizza - soooo cheesy! I love it. Half of a pizza is 345 calories with these toppings:
So one serve:
It's about 12-14" in diameter.
And the other night, my other favourite low calorie massive meal: zucchini pasta (with goat cheese, sundried tomatoes, pine nuts, mushrooms, and cherry tomatoes) that comes to about 300 calories for this large bowl, and a faux chicken fillet (quorn) 200 calories.

Wow - 15 pages since I last checked. Quality stuff all around.
Here's what my lazy meals have been looking like recently.
Cranberry + goat cheese + pecan salad with crispy brown butter chicken0 -
Past few days:
Chicken nachos with cheese, mozzarella, greek yogurt, guacamole, salsa and a cherry tomato.
This is why i'm amused by those "can't eat 1200kcal" threads. That right there^ was 2000kcal, made up of entirely "clean" foods (chicken, sweet potato, veggies in the mince, etc) and I ate it all in less than an hour. And I'm 55kg (121lbs). I just don't understand how mere mortals work. :ohwell:
Ahem. Anyway, tonights noms:
Pork loin with apple sauce, veggies covered in cheese and buttered kumara with two fried eggs.
Frozen bananas, honey, cashew butter and blueberries. Om.0 -

Ok I'm brand new at this so I want to know - when you're calculating the calories for your meals do you count like every lettuce leaf and slice of onion?0

Yeap.
Although I'm less fussy with my lettuce and onion calculations than I am with... say cheese, oil and bread.0 -
