    Just an average lunch at home
    Sandwich: 2 slices ezekial bread(toasted), 3 slices tofurkey, some spinach and tomato slices(and black pepper)
    Cut up carrots and apple,
    and chocolate milk made with soy/almond milk
    . . . and thats alot of cinnamon I put on top because I love it... so much!

    Last night's dinner: Sockeye salmon, broccolette, snow peas, mushrooms, onion and carrots simmered in yellow curry sauce. I thought I was going to eat half but I ended up eating the whole thing - 713 calories. I had room in my budget, thought, just had to skip the usual late night snack.

    Best lunch ever at work - My colleagues better be jealous. Spinach salad topped with chicken and then roasted veggies and sriracha. Don't mind the tupperware.

    Dinner was a massive taco salad made with ground chicken, loads of chopped/grated veggies, nooch, pico, hot sauce, and sour cream. That's a big @ss plate.

    @Crystal817, fish tacos are always something I feel like I need to make more of! Yours look amazing. What do you put on them?

    Turkey with carrot/daikon and avocado.
    Turkey looks amazing NZ - How did you prepare it?

    I purchase turkey breasts from the supermarket - I think they are brined. Bash garlic and rosemary together with salt, pepper and coconut oil -- slap it on the turkey, and then sit it in the fridge overnight. The coconut oil goes hard, so when you take it out of the fridge, you litterally just put it in a hot pan til it's brown on one side then flip it. Easy as.

    I made a cilantro lime slaw and a cilantro lime crema to put on the fish. For the fish I used tilapia and low sodium taco seasoning, then baked it in the oven.

    Some days you can have my foodie friend. Like when he posts amazing photos of the free meals he gets on facebook. The ones with the delicious crispy pork-belly are the ones that usually make me want to unfriend him.

    Querian. Thanks for the recipe! I added fresh Asparagus and used Gruyere instead of Parmesan. Would have taken a picture of it sliced, but I got impatient and cut it while it was too hot. :laugh: My piece fell apart.
