    So glad everyone has liked it. I've started adding a teaspoon of peanut butter to the mix, makes it extra moist !

    It used almost the same ingredients as what I use in my shake, was very filling, a great hit of protein and pretty darn tasty!

    Ingredients

    Scoop of protein powder
    One egg white
    About 1.5 tbsp of almond milk
    Tbsp of stevia
    Dash of baking powder
    About 1 tbsp of soda water

    Optional toppings
    Pb2 - I used
    Light canned whip - I used
    Topping/filling of your choice (choc chips, fruit, Nutella, nuts etc)

    Simply whisk all ingredients together in a mug well with a fork until smooth, microwave for about 40 seconds. Top with your choice of extras and enjoy

    Does it matter what type of protein powder is used? I have never bought protein powder, yes, I know, how sad. Any suggestions for a first step in that direction. I am a bit lactose intolerant, does protein powder need me to take lactaid with it? I love the idea of a scone, so,creative and easy clean up in one mug!

    was your protein powder flavoured? I have a big bag of chocolate smooth but wasn't sure it would be nice? Also what size of scoop did you use? Mines is currently 25g so not sure if I would need to double it. thanks.

    I actually call this a muffin since mine has more of a muffin-y texture. I have this for breakfast about three times a week.

    My favorite variations (all use vanilla flavor powder):

    1. Add 1 tablespoon of chocolate chips.

    2. Add a couple teaspoons of unsweetened cocoa powder and some white chocolate chips.

    3. This may be my fav. Add cinnamon and white chocolate chips.

    I also leave out the sweetener and the club soda. I do add a bit more milk to compensate. And I usually cook for 1 minute 20 seconds.

    I always top it with a bit of whipped cream.

    I can have this when my family is having something yummy like donuts or bakery muffins and I don't feel deprived. And the best part is I feel full for hours!

    I've never been tempted to buy protein powder (the idea of shakes never appealed to me), but this definitely got me!! Will be for sure trying this.

    I just use extra milk--enough so the consistency is like thick cake batter.

    I have made this twice now and mines keeps rising way above the mug! Is this meant to happen or is it too much baking pwder? Mines seemed abit eggy as well so maybe too much egg white.
