When is 1200 calories appropriate? (hint: almost never)

The reason I leave my planner at 1200 is because I don't get to set my portion sizes, so I rely on so much estimation to record my calories. Also, when eating 1450 calories or more, even with exercise, I have been feeling really sick and full lately.0

I just started on monday I have been eating 1200 calories for the last 5days, I weighed myself today and I have gained 2 Kgs! Why would this be?
Because you started exercising too, either totally or in intensity, and you increased water weight.
Or one or both weigh-ins were not valid, so attempting to do any math in 5 days is useless.
Only valid log in time for meaningful stats is morning after rest day eating normal sodium levels, not sore from last workout.
If you at less than normal sodium and had big workout prior to first weigh-in - false water loss.
Now this weigh-in you ate higher sodium yesterday and perhaps lifted - false water gain.
Combo could easily be 2 kg.0
