    World's be green chili pork! Easily doubled too, depending on the size of your pot.

    1 pork sirloin tip roast ( I get them from Costco)
    1 onion all chunked up
    4 cloves of garlic, peeled but you can leave them whole
    1 can of your favorite green enchilada sauce (mine is Hatch - medium)
    Salt and pepper

    Toss it all in cook on low for 8 to 10 hours. Shred with two forks. I leave it kind of chunky though. Seriously will melt in your mouth. This is great for tacos, burritos, or as the star of an amazing taco salad. I have even used this pork recipe to make the filling for my Christmas tamales.

    Italian Beef:

    3-4 lb chuck roast (any kind will do really)
    3 Beef Bullion Cubes
    1 Packet dry Italian Dressing Mix
    1 T Minced Onion
    1 1/2 Cups Water

    Cook on low all day. Usually about half way through the day I'll shred it up and then keep on cooking it. Serve on buns with some shredded mozzarella cheese. One could add peppers and onions as well.

    Crockpot Chicken Fajitas (this is what is currently cooking in my kitchen now)

    2lbs chicken breasts
    1/2 cup chicken broth
    1 green bell pepper sliced
    1 red bell pepper sliced
    1 onion sliced
    2 tsp chili powder
    1 tsp cumin
    2 tbsp lime juice

    Cook on high 4-5 hours or low for 6-7 hours. Serve on tortillas.

    **I'm having mine over lettuce for a Chicken Fajita Salad, topped with fat free sour cream and salsa :) Works out to about 30grams of protein and 300 calories for the whole salad.
