    I make my own taco seasoning too - way less sodium and so much better. I'm going to try using some cottage cheese in this too!

    I've got it in the oven right now!

    I had to make some substitutions based on what I had in the house.


    What I used:

    7 oz Ronzoni Smart Taste Rotini
    1 lb Ground Beef, 8% fat
    3/4 Plain Non-Fat Greek Yogurt
    1 Package Low-Sodium Taco Seasoning
    1.5 Cups 50% Reduced Fat Shredded Cheddar Cheese
    1 Cup Herr's Medium Salsa

    Ended up with:

    Calories: 219
    Carbs: 18
    Fat: 8
    Protein: 21
    Sodium: 369
    Fiber: 2
    Sugar: 2

    Or, if you don't want MSG in your meal, spend the extra 30 seconds to make your own taco seasoning mix:

    (Recipe is for the equivalent of one packet of taco seasoning)

    1 tablespoon chili powder (you can buy hot chili powder if you want it spicy)
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon crushed red pepper flakes
    1/4 teaspoon dried oregano
    1/2 teaspoon paprika
    1 1/2 teaspoons ground cumin
    1 teaspoon sea salt
    1 teaspoon black pepper

    I like the taco bake idea :)

    Or you can use plain greek yogurt instead of the sour cream, it tastes the same but has more protein. I recommend the 2% version, otherwise you will have a lot of extra calories.
